    How to make healthy vegan soups

    It's easier than you think to make amazing plant based soup that tastes just as good as its counterparts

    • Layering flavors. We're talking onion, garlic, super flavorful broth, spices, fresh herbs, more veggies, and SALT! Don't underestimate the power of salt and a squeeze of lemon for brightness. The key to a flavorful soup is slowly building the flavors.
    • Adding umami: A bit of soy sauce, miso, or tomato paste go a long way in adding that savory flavor.
    • Don't skip the fat. Cook the veggies in plenty of extra virgin olive oil for flavor and mouthfeel. Use non-dairy milks or cashew cream to make amazingly creamy soup sans the dairy!

      We ran a small cafe that featured made from scratch soup that was very popular but I must say the fact that people think soup is seasonal is just plain silly. SOUP ALL YEAR !!

      For your crockpot mushroom, barley, and lentil soup, could you do it on the stove instead of a crock pot just by sauteeing the vegetables first, then adding everything to the pot to simmer for awhile? I don't have a crockpot, but I'd love to make that recipe.
