Heya, friends!
I've definitely been cooking a lot so I'm excited to get back into the Lovely Meals Lately routine. I know this normally goes live on Wednesday, but I couldn't post this yesterday without telling you about our home marriage first!

Simple as it gets---Grape Nuts with unsweetened vanilla almond milk. I've been rotating between cravings Grape Nuts and Cheerios.
I ate both of them growing up all the time (hi, mom!) and it's been so nostalgic going back to them.
The best chocolate chunk banana bread! I made it to go with my breakfast strata (used what I had on hand, no cream cheese, different veggies...made a half batch and cooked it in the morning).
Avocado egg salad with Hippeas. I hard boiled eggs in the Instant Pot for quick snacks and made this yummy creation for lunch. It doesn't sit well in the fridge so I'd just make enough for that day.
Simply mash together a couple eggs with avocado, lemon juice, diced onion, salt and pepper. I stirred in some kraut, too.
The ultimate vegetable soup in the Instant Pot. Because soup is getting me through these times!
Plain 2% Greek yogurt mixed with applesauce from our Yellowbird CSA, lots of cinnamon, and vanilla extract. So good for naturally sweetened yogurt as a snack!
I like to top it with chopped apple and a drizzle of PB (did that after the pic).
Shrimp curry with cauli rice! I had a lot of frozen shrimp, cauliflower, and naan from ALDI so this meal came together using everything I already had on hand.
Enchiladas with cashew cream. So divine with salsa and guac.
My favorite almond flour chocolate chip cookies. Try it with Numi rooibos chai tea at night.
Israeli power salad to use up all the lentils and walnuts I have! I always forget how delish this is.
Apple cinnamon french toast on the weekend was such a treat. I've been having cereal for breakfast during the week (craving simple and easy) so it's fun to do something different on Sunday to prevent every day from blending together.
Easy vegan pancakes for another weekend treat (plus some bites of Jeff's eggs that I stole).
My favorite healthy tuna salad on toasted bread with a Bubbie's pickle (the best) and salt and vinegar kettle cooked chips.
Power Mac & Cheese with frozen broccoli, cauliflower, and peas mixed in. I used Trader Joe's brown rice penne. Super tasty with Frank's hot sauce.

Thank you for sharing! I always look forward to this post- especially these days when time is not a constraint in the kitchen, but the inspiration may not be there.
Also- we made your vegan lasagna soup last night and it was sooo fantastic, easy, and quick. Filled with "pantry staples" and a good way to use up a few odds and ends of veggies we had in the fridge.
