Mushrooms are one of my absolute favorite ways to add a meaty umami flavor and texture to vegetarian dishes. Bonus? These fungi are also filled with nutrients that have been shown to have antioxidant and anti-inflammatory effects in the body.

What to make with mushrooms
There are so many varieties of mushrooms that you can find a delicious recipe for almost any craving. I love to add fresh mushrooms to soups or stews, egg or pasta dishes, or use them as a meat substitute in tacos. Most mushrooms can be easily swapped for other mushroom varieties — just check the recipe notes for more info!
The texture and flavor of mushrooms are so versatile (and they're in season year-round) that the sky is the limit with healthy mushroom recipes.
How to clean mushrooms
You want to avoid soaking mushrooms in water so they don't get too water-logged.
First things first — take a good look at your mushrooms. Are they covered in dirt? If so, a quick rinse with warm water in a colander should do the trick. Dry them off immediately after they're rinsed.
If they don't look too dirty, the best way to clean mushrooms is to use a paper towel (or pastry brush) to give them a good brush.
Health benefits of mushrooms
As a dietitian, I adore the rich, umami flavor of shrooms and the fact that they're rich in:

Certain types of mushrooms can also be rich in vitamin D2 — one of the few plant-based sources. Check the label of your mushrooms for "UV-treated" or "vitamin D-enriched" for this benefit.
