Beautifully thick and creamy Dragon Fruit Smoothie Bowl is the healthy breakfast of dreams! It's perfect for Valentine's Day breakfast but just as delicious year-round.

Breakfast this mornin' and tomorrow and the next day and forever is this here love bowl!!
That PINK though. I can't not SCREAM about it. It's like the feeling when your sock falls into your boot and you pull it out. It's hearing that one song you love and haven't heard in ages. It's collapsing into the comfiest bed after the longest day.
It's when the stranger ahead of you buys your coffee. (Okay, that's never actually happened to me but I know my time is coming.)
We're straight bliss bowlin' today. Bliss bowlin' with a Pink Cookie Dragon Fruit Smoothie Bowl who's flavor and texture is gonna have your world spinning. It's topped with the only and only Simple Mills' Chocolate Chip Crunchy Cookies, which are a gift to taste buds across the nation.
Coming from someone who's normally all soft-cookie-or-the-highway, these wholesome little dream bites made with almonds, coconut oil, and coconut sugar are the most INSANELY perfect smoothie bowl topper. I also eat them by the handful with chilly almond milk whilst watching episode after episode of The Crown.
I've been a gigantical fan of Simple Mills for years now. For a walk down memory lane, check out these Raspberry Chocolate Chip Stuffed Cookies from three years ago.
After all my history with this amazing woman-owned company, today is THE most exciting day because we're bringing Alchemy into the love party! Alchemy x Hummusapien x Simple Mills wut wuttttt! I dig it.
We always create fun holiday specials at Alchemy but this year it's coming full circle with not only a yummy smoothie bowl recipe for you and you and you and everyone on the webosphere, but also the opportunity for my Columbus lovers to come eat this very bowl at Alchemy during the month of February!
If there ever was a time to drive your hiney to Columbus, now is absofreakinglutely the time.
As an added bonus, we're doing a little #loveyourself giveaway for my Cbus pals!
Simply come enjoy this Pink Cookie Dragon Fruit Smoothie Bowl at Alchemy and post a picture with the hashtags #simplemillsXalchemy and #loveyourself to enter to win an amazing basket of baking goodies from Simple Mills! I'll announce a winner on Instagram on February 28th.
This beautiful smoothie bowl is inspired by the beloved Nutty Dragon bowl on Alchemy's menu made with dragon fruit and peanut butter and the yummiest coconut on top.
Did you know we were the first place in Ohio to offer dragon fruit?
We're trailblazers at Alchemy, and offering super FUN bowls (and tank tops) with toppings like maple cashew cream and crumbled cookies is what makes us who we are: a bunch of spunky, lighthearted, yummy souls who don't take ourselves too seriously.
Made with almond milk, frozen dragon fruit (find it at Whole Foods!), strawberries, banana, cashew butter (amazing for the cookie flavor but sub another nut butter if need be), and chocolate plant protein powder, this bowl legit tastes like cookies and totally reminds me of Valentine's Day.
And love! If you don't have chocolate protein, add a tablespoon of cacao and maple syrup for sweetness. And the toppings!! Can you even?!
I hereby declare February the month of loving yourself. The month of cozy breakfasts of hot pink glory and mini cookies. The month of saying yes to things and people and places that bring you joy, peace, and calm.
The month of soul and intuitive living and epic breakfasting because you're a badass and you deserve nothing but the best.
I love you. And you should love you, too. Start with this bowl of love for breakfast and you're like halfway there!

This is my favorite summer smoothie. I usually sub the cashew butter for almond butter since I'm more likely to have that on hand.

Holy yum! Looks like I need to get myself to Alchemy soon . Or dig the pitaya out of my freezer and get to Whole Foods for those cookies (which are on sale right now!). Or both. All the pink smoothie bowls need to happen.
Alexis says
You totally do! Or yes, go freezer diving ๐

I love the pink colour of the smoothie bowl. Certainly puts the overpriced, store-bought ones to shame ๐
