Happy Spring, my friends!
I thought I'd try something different and break this down into meals versus a smorgasbord. As always, don't miss all my past lovely meals lately posts for more inspo. Enjoy!
Breakfast
On weekdays when I'm riding solo getting my kids to school, I make avocado toast with Whole Foods' heritage grain sourdough plus hard boiled eggs. I like to make a batch in the Instant Pot on Sundays. (Plus coffee with oat milk of course, which I start sipping around 5:30am.)
Then when I get home around 10:15am from my workout, I either have a smoothie or yogurt. On weekends we do more variety!
Post workout blueberry cacao smoothie with chocolate plant protein.

Cottage cheese egg bites are a breeze to whip up and such a nice change for grab-and-go!

Lemon blueberry overnight oats may just be my favorite flavor ever.

Lunch
More of a snack plate versus a meal, but delish nonetheless. Costco's Kirkland hummus cup, leftover roasted sweet potato, Honey Smoked Fish Co honey smoked salmon, cotton candy grapes and strawberries. Ended up eating crackers with it, too!

Couldn't ask for a better lunch than my crazy good kale lentil salad with feta and olives. Best leftovers everrrr.

I want to post a recipe for this chickpea caesar pasta salad but it's just pasta (this is Goodles), roasted chickpeas, a bunch of chopped romaine, cherry tomatoes, marinated grilled chicken, shredded parmesan, and Chosen Foods caesar dressing. It sat well for days in the fridge!

My favorite tofu quinoa salad salad with maple tahini dressing always hits. So much flavor!

15-minute chicken salad is a hit, especially when I have lots of celery and grapes on hand. So good with crackers or on sourdough.

Dinner
Whole wheat pita pockets with chicken shawarma, greens, leftover rice, tomatoes, pickles, and store-bought tzatziki.

Burger night...the kids' fave!

Jeff loves this Nourishing chicken and dumpling soup for a cozy dinner on a chilly night (which has been rare in Denver!).

Garlic shrimp with tomatoes, coconut milk, and cilantro...an oldie but a goodie that's really easy. I buy a big bag of frozen wild shrimp at Costco and thaw what I need the night before. Served with Instant Pot basmati rice!

Pizza every Friday! Cart Driver is such a treat.

Snacks and treats
Our usual nightly something sweet which is either dark chocolate or some frozen Trader Joe's dessert like their mint chocolate ice cream sammies or Hold the Cone! Mini Ice Cream Cones (obsessed).
You MUST try my new healthy lemon cake with lemon cream cheese frosting. A dream!

I made my favorite ever chocolate chip cookies to take to a friend's for dinner and they're always the biggest hit.

Banana protein bars dipped in melted dark chocolate with flaky salt...an excellent idea.

I have an endless supply of fudgy black bean brownies in the freezer!

Things I'm Loving Lately


- Watching: The second season of "Paradise" is off to a great start! Also loving "Love Story."
- Reading: Theo of Golden is a beautiful, heartwarming read. Absolutely adored The Lion Women of Tehran.
- We've been using these stainless Bento box daily for the kids' lunches, can't recommend them enough.
- Just ordered this super cute brown polka dot blouse.
- I don't know why it's such a struggle to find a good everyday white tee shirt that's flattering, but I love this new 100% cotton white tee I just got. It has such a good fit and great thickness. I'm getting the green, too! Also this farmer's market sweatshirt is sooo good and cozy (look at the back!) but almost sold out. Runs big.
- Stocked up in our fave mineral sunscreen the whole family uses!

I love target shirts and have this one in black and a V neck white one. Needed this meal inspo - in a rut lately. Looking forward to reading 'Strangers' and watching 'Big Mistakes' on Netflix.
