I can't stop making this foolproof recipe for blueberry lemon overnight oats for the most flavorful, fast and filling breakfast! They're loaded with all the good stuff-- Greek yogurt, chia seeds, lots of fresh lemon, and frozen blueberries (not to mention 14g protein and 10g fiber per serving!). Recipe makes 4 servings so you can prep ahead for busy mornings then grab-and-go all week.

Get ready for the dreamiest (and prettiest!) overnight oats flavor you've ever laid mouth on. I adore my blueberry overnight oats but found myself craving something more...bright. Zippy! It's giving spring and I'm here for it.
The flavor of these is the best of both worlds, sweet and punchy and dessert-like without being super sweet. Truly just such a fun and unique flavor. I've been making them on repeat for when I want fruit forward oats vs chocolatey and my husband and I cannot get enough.
He texted me after trying them and said "I hope I can take more to work tomorrow!" Basically he's obsessed.
Notes from recipe testing
- Greek yogurt: I developed these to enough yogurt per serving so they're extra filling but also not overwhelmingly tangy since we're using lemon juice, too. I tested them with all fat percentages and can say whatever you keep on hand is great. For us thats nonfat or 2%, but whole would be delish (and extra rich!). A thick dairy-free Greek yogurt like Forager would work excellent here as well.
- Chia: I made these with and without chia and the chia version was way better--thicker and creamier texture for sure. Plus the dietitian in me can't help but love the healthy fat and fiber boost!
- Lemon: When I was developing this recipe I actually thought I'd use twice the amount of lemon I did, but I was wrong! I was surprised how bright it was with just 1 lemon. I was a bit worried about the juice curdling the milk but this didn't happen, likely because of all the oats and the quick refrigeration. (I recommend non-dairy milk here just in case for that reason.)
- Blueberries: I made a batch of these with fresh blueberries and it was crazy how much more flavorful the frozen ones were. Since their juices meld into the mixture so nicely, I recommend using frozen. I find the little wild frozen blueberries (Wyman's or Kirkland brand) are the sweetest so I prefer those.

Storing leftovers
I find these oats last 3-4 days in the fridge. Ours are always gone in a couple days! f you use fresh berries, they may last closer to 2-3 days.
You can easily halve this recipe to make 2 servings as well!

Ingredients
- 2 cups old fashioned oats
- 2 ½ tbsp chia seeds
- ¼ tsp fine sea salt
- 2 cups milk of choice (I use unsweetened soy)
- ¾ cup plain Greek yogurt
- 3-4 tbsp pure maple syrup, to taste
- 1 large lemon, zested and juiced (about 3 tbsp fresh lemon juice)
- 2 tsp pure vanilla extract
- 1 ½ cups frozen blueberries (I love the mini wild ones), plus more for topping
Instructions
- Place oats, chia seeds, and salt in a mixing bowl (love this blue ribbed one that comes with a lid!). Whisk to combine.
- Add milk and yogurt, then whisk until smooth. Add maple syrup, lemon juice and zest (rinse lemon well, zest first, then juice), and vanilla. Whisk again.
- Stir in frozen blueberries. You can use fresh but they won't have that pretty purple color! Portion into 4 containers and refrigerate for at least 3 hours, or overnight. Serve chilled! You can top with coconut, crushed graham crackers, etc. Store leftovers in the fridge for 3-4 days.

Great point! I'm just so used to using soy at home but you can absolutely use any milk you like. We do 2% often as well! Just updated recipe to not call for non-dairy.

I understand. I suspected it was something like that. I kind of figured that any type of milk would work, but some people might think that they need to go and buy soy or almond milk so it is probably better to change it :-).
Could I also ask you to, whenever you get a chance, update the metric version of your recipes? It still says cups for a lot of ingredients which means a lot of converting (I will still do it fo a recipe I am really keen to try) but it would be so much easier if it said dl (deciliter, like we use in Scandinavia) or ml/milliliter. Thank you!
