I'm riding the overnight oatmeal train and I don't plan on jumping off anytime soon. They're just too easy! Nourishing to boot, too. They key is balancing the carbs we so adore with plenty of protein and fat to create a balanced a.m. sitch that keeps you full.
I'm obsessed with my lemon blueberry overnight oats but when I'm fresh outta lemons, this creamy blueberry almond butter version hits every time. It's done in a snap and I can eat easily shove them in my face while I'm chasing my crazy kiddos at 7am.
Basically the dream meal prep breakfast for us busy souls!
The low down on key ingredients
- Milk: I always have almond and soy milk on hand so those are my go-to for the liquid base (soy for more protein!), but you can use any milk you like, like cow's milk or oat milk.
- Greek yogurt: I tested this recipe with 2% or whole all work to add protein, thickness, and creamy texture. I love blueberry yogurt here but plain, vanilla, and lemon are all delish too. I use Siggi's or Skyr Icelandic brand.
- Chia seeds: It was clear in testing that chia adds the perfect thickness. (Plus the dietitian in me loves the fiber and healthy fats boost!).
- Almond butter: I love the creamy mouthfeel and sweetness almond butter adds. When I tested these without nut butter, I missed the silky texture and pop of nutty flavor!
- Blueberries: Stick to fresh versus frozen since frozen will release a bunch of liquid. (I did make a batch with frozen and they turn a pretty purple!)
- Salt: Salt is so important for flavor yet so many overnight oat recipes don't include it. A key ingredient for rounding out the flavors!

Storage
Store oats in the refrigerator in an air-tight container with a lid for up to 4 days.
Wanna freeze for later? Simply freeze portions in a greased muffin tin. Once frozen, place portions in a freezer baggie and freeze for up to 3 months.
Thaw overnight in the fridge and top as you would normally. DIG IN!

Description

Ingredients
- 1 cup old fashioned oats (use certified gluten free if needed)
- 1 cup unsweetened vanilla almond milk
- ½ cup blueberry Greek yogurt (5.3oz container, I use Siggi's or Skyr Icelandic)*
- 1 tbsp chia seeds
- 1 tbsp almond butter
- 2 tsp honey or maple syrup (more to taste)
- 1 tsp vanilla extract
- ⅛ tsp fine sea salt
- ¾ cup fresh blueberries, plus more for topping
Instructions
- Place all ingredients except blueberries in a mixing bowl or large liquid measuring cup. Whisk to combine.
- Stir in blueberries. Taste and add any additional sweetener to taste. Portion into 2 jars or containers. Cover and refrigerate for 4 hours or overnight. Stir before eating and enjoy cold out of the fridge with extra blueberries and a drizzle of almond butter!
Notes
*You could also use vanilla, plain, or lemon Greek yogurt. I find using blueberry really adds to the flavor! If you use plain yogurt, you may want more sweetener.
