Description

Tasty, filling and super easy Blueberry Overnight Oats made with healthy staples like Greek yogurt, chia seeds, and almond butter. Spend 10 minutes at night and wake up to a healthy, lower-sugar oatmeal breakfast, no cooking required. Gluten free, kid-friendly and portable!


Ingredients

  • 1 cup old fashioned oats (use certified gluten free if needed)
  • 1 cup unsweetened vanilla almond milk
  • 1/2 cup blueberry Greek yogurt (5.3oz container, I use Siggi's or Skyr Icelandic)*
  • 1 tbsp chia seeds
  • 1 tbsp almond butter
  • 2 tsp honey or maple syrup (more to taste)
  • 1 tsp vanilla extract
  • 1/8 tsp fine sea salt
  • 3/4 cup fresh blueberries, plus more for topping

Instructions

  1. Place all ingredients except blueberries in a mixing bowl or large liquid measuring cup. Whisk to combine.
  2. Stir in blueberries. Taste and add any additional sweetener to taste. Portion into 2 jars or containers. Cover and refrigerate for 4 hours or overnight. Stir before eating and enjoy cold out of the fridge with extra blueberries and a drizzle of almond butter!

Notes

*You could also use vanilla, plain, or lemon Greek yogurt. I find using blueberry really adds to the flavor! If you use plain yogurt, you may want more sweetener.
