Happy June, friends! We are living our best summer life over here. Tons of pool time, popsicles, kiddos loving camp, grilling, and all the warm weather fun. Plus Charlie turns THREE at the end of the month...how?!
Were planning a little weekend trip to Steamboat over July 4th and I'm so excited. We've never been, so holler if you have any recs!

Breakfast
I look so forward to these sheet pan cottage cheese pancakes! My kids ate half the pan for dinner....LOL.

Toasted sourdough with avocado and sauerkraut, eggs, and a pb banana zucchini muffin. (I usually have a bar or muffin with my first cup of coffee around 6:3am then savory around 7:30am.)

This post run smoothie was soooo good! Frozen banana, frozen raspberries, frozen riced cauli, spinach, PB, salt, soy milk + coffee, and my fave vanilla protein powder lately.

Mains
I don't have a picture but one night we got wild rockfish from Costco and I made fish tacos. The fish itself was fantastic--firm, flavorful, and flaky!
I coated the fish in Siete's fajita seasoning and kosher salt then cooked it in oil for a few min on each side a cast iron skillet on the grill (to not stink up the kitchen). We kept the toppings simple with store-bought guac, peach salsa, and slaw.
My fave new recipe is this crunchy cabbage salad with tofu and peanut sauce! It seriously checks all the flavor, texture, and nutrition boxes.

This Greek-inspired pasta was ridiculously good. I sautéed a bell pepper until soft, added a bunch of spinach, then tossed everything with a box of Barilla Protein+ pasta and a jar of TJ's Caro Sugo Tomato Basil Sauce. Such a solid sauce if you haven't tried!
We topped it with feta plus a quick mix of chopped parsley, mint, green olives, lemon juice, and salt.

This was a really delish bang bang tofu situation with leftover baked potato and air fried green beans. The sauce was a little mayo, Greek yogurt, soy sauce, rice vinegar, garlic powder and sriracha.

Ten-minute spicy tuna edamame salad with crackers and seaweed for the no-cook lunch win!

This roasted broccoli salad was a big hit and delish leftover! I didn't have bacon nor anchovy paste, but I improvised and it was still super tasty. Paired with burgers, Grillo's pickles and Alexia fries.

Jeff and I went on a rare lunch date to Leven Deli when my mom was in town. Such a treat! We shared their famous reuben, a Mediterranean chicken sandwich, and a huge chocolate cookie. The curried potato salad was honestly my favorite!

Snacks
Cottage cheese with Triscuit Thin Crisps (been eating these since childhood) and strawberries. All the sweet,salty, and crunchy notes!

FAGE Greek yogurt (the creamiest, thickest yogurt ever) with cacao and maple syrup mixed in, topped with cacao nibs and blueberries.

The obsession with my dark chocolate chunk Greek yogurt muffins continues!

Treats
Our treats on regular rotation are TJ's chocolate Hold the Cone! mini ice cream cones and mini mint chocolate ice cream sammies. You know!
I'm so lucky that my friend's mom (hi, Val!) gifted us this gorgeous and insanely delicious homemade linzer torte using their family recipe from the 1800's. The buttery crust and hints of cloves were absolutely divine. We cherished every bite!

Have you tried my new healthy chocolate cake yet? It's so fudgy and amazing!

Pizza and ice cream date with Jeff! We shared tiramisu and raspberry dark chocolate, which were both heavenly (and appropriate since they're from Heaven creamery ;).

Things I'm Loving Lately
- Watching: The Lincoln Lawyer and Your Friends and Neighbors. Both so good.
- These freezer bags are the bomb. I originally bought them to keep my kids' lunches cold and now I also use them for road trips, the pool, etc. They're so handy for packing yogurts, cheese sticks, and fruit. I just bought the snack bag version to have a small one for pool!
- I'm halfway through Yesteryear and LOVING it. I find it so witty and entertaining. I was immediately hooked in a way I haven't felt about a book in a while!
- This is my daily roll-on creamy eyeshadow--the stuff of dreams. Adorn is my go-to for shimmery neutral taupe and I love Regal when I want something a bit darker/plum/brown. Brocade is on my list next!
- I've also been using Ilia's super serum skin tint (shade Paloma ST9) daily for about a month now. I really love the light coverage, tint, SPF, and quality skincare ingredients all rolled into one.
- In case you need some gift ideas for Father's Day, I got Jeff this cute new bathing suit (he loves anything from Huckberry) and these daily athletic shorts (when you buy 2 they're both 15% off!).
- The platform sandals I live in at the pool or whenever I need a slip on shoe (which is always). CRAZY comfy and light weight. I shared the sister shoe to this one that I have in black and so many of you love them, too!
- Charlie's in a big boy bed and loving these 100% cotton car sheets. So cute! I got him this mattress and I'm thrilled with it.

The cookies at Leaven are the best!
For Steamboat, I haven't been back since I had my son so my recs lean toward the amazing concert venue there, Schmiggity's and the hot springs.
There is a great Mexican place downtown - Salt & Lime I think? And a tucked away Thai place on the far end of downtown that's kinda hidden. Great food though!
