Meet my most favorite toast in all the land...mango toast!
There are oodles of ways to top toast, which has been a major trend for the last five years. I remember when we first opened Alchemy in 2014 with a selection of avocado and nut butter toast stunners on our menu. Who remembers this Pumpkin Cashew Cream Toast?!
We have more options than ever now, my old favorite being the strawberry avocado toast with honey and coconut that inspired today’s post. There is something so satisfying about juicy, sweet, refreshing fruit atop creamy avocado plus a pinch of salt to round everything out.
Make way for my new fave....fresh mango is hands down my go-to toast topper these days! Whether it's piled high with velvety avocado, tahini, or almond butter, the refreshingly sweet combination simply doesn't get old
Ingredients in fancy toast
First, let's talk toast toppings! It's so much easier than you think to achieve the fancy toast you see at gourmet restaurants right in the comfort of your own home. The best part is the sweet and savory base spread options!
- Mango: packed with health-promoting nutrients like vitamin C and exploding with bright flavor to contrast with the base spread. The best news is that the six varieties of mangos are in season year-round, so you can enjoy this summer-inspired breakfast any time of year!
- Bread: see below for all my bread recommendations, but go for your favorite whole grain bread that makes nice toast, whether that’s homemade, from a local bakery, or the grocery store.
- Avocado: for a luscious, creamy base option.
- Tahini: wonderfully nutty and almost savory, I love drippy sesame seed butter.
- Almond butter: a creamy base that's sweeter than tahini. I used roasted.
- Accompaniments: like flaked coconut, sesame seeds, mint, chili flakes, cardamom salt, and lime juice for added flavor, texture, and a pop of color.
Which bread to use for gourmet toast
Next, let's dive into the bread. It's so important!
If you're going homemade, I swear by this recipe for no-knead whole wheat bread.
If you have a local bakery, go for sourdough, a seedy multi-grain, or whole wheat. I used store-bought bread, so if that's your jam, you can go for whatever is your favorite. Soft, sandwich-style bread tends to be less optimal for toast since it retains that softness.
I like this sprouted grain and legume bread, which is what I used in today's recipe. Find it in the freezer section!
Be sure to store bread in the freezer to prolong its shelf life. When you're ready to make toast, simply pop in directly in the toaster. Refrigerating bread dries it out, and fresh bread without preservatives will only last a couple days on the counter.
How to cut mango into slices
Lastly, let's review how to get those gorgeous mango slices in order to make the fancy toast of your dreams.
I opted for sliced versus diced mango for today's toast topping because I prefer the coverage, but you can use whatever you’d like. Scroll down on this post for step by step photos on how to slice a mango.
This recipe calls for ripe mangos, so be sure to give it a gentle squeeze to see if it gives slightly when pressed. Each mango variety has a slightly different color, so don't use color as an indicator for ripeness.
- Always give the mango a good rinse before cutting it. (Same goes for avocado!)
- Use a cutting board and a sharp knife to slice each side along the pit. If your knife keeps hitting the seed without getting a good chunk of fruit, you're on the wrong side!
- Slice the flesh vertically, being careful not to cut through the skin.
- Use a spoon to scoop out the slices, and then layer them onto the toast.

Ingredients
Mango Avocado Toast
- 1 slice of bread, toasted
- ½ of a ripe avocado
- 4-6 slices of mango
- pinch of red pepper flakes and sea salt
- splash of lime juice
Mango Tahini Toast
- 1 slice of bread, toasted
- 2 tbsp tahini
- 4-6 slices of mango
- pinch of cardamom, sea salt, and black sesame seeds
- 2 leaves fresh mint, torn into pieces
Mango Almond Butter Toast
- 1 slice of bread, toasted
- 2 tbsp creamy almond butter
- 4-6 slices of mango
- sprinkle of unsweetened flaked coconut
Instructions
- Spread the base topping on each piece of toast (avocado, almond butter, or tahini).
- Top with suggested topping pairings, layering the mango on top of the base spread followed by the garnishes.
Notes
Another combination I love is avocado, mango, tahini, and salt.
