Who else thinks brie is the best thing since sliced bread? I have fond memories of holiday get togethers growing up where croissant wrapped brie with jam and pecans and grapes was the star. Every gooey bite was so perfectly creamy, tangy, sweet, and SATISFYING. I was totally inspired by croissant wrapped brie when I dreamed up these delish and oh so grabbable Cinnamon Apple Pecan Brie Bites. Aren't they dashing?
I know more than ever that the holiday season can be a wee bit stressful. But food is meant to be joyful and celebrated, not stressful and complicated. These delish Cinnamon Apple Brie Bites with Pecans honor simplicity and ease. No need to get fancy here! I always find that simple, seasonal ingredients make the most fabulous dishes. The truth about cooking is that when you're focused on quality ingredients, it doesn't take much to make the flavors shine.

Today we're making Cinnamon Apple Brie Bites by topping sprouted seed crackers with one of my favorite seasonal goodies...apples! Apples cooked down in luxurious coconut oil, pure maple syrup, and cinnamon, to be exact. Pair warm, spiced apples with creamy brie cheese, toasty pecans, and fresh rosemary and you've got the sweet, savory, creamy, and crunchy boxes all checked. Appetizer goals!
As far as the apples go, I used a Honey Crisp I had in the fridge, but really any apple will work. If you want a more tart apple, go with Granny Smith. I'd recommend throwing on a chunky sweater or flannel and going apple picking with your bestie in honor of these bites. 'Tis the season!
Oh, and if you want warm, melty brie, you can totally pop these Cinnamon Apple Brie Bites with Pecans in the oven for a few minutes prior to serving. Then put on fuzzy socks and Frank Sinatra and sit by the fire. So cozy, right? And if brie ain't your thang, I get it. I mean I don't get it because clearly I think brie is heaven-sent BUT, these would be terrific with goat cheese, too. You do you, honey!

Description
Make these tasty Cinnamon Apple Brie Bites with Pecans for an easy and festive holiday appetizer!
Ingredients
- ½ tbsp coconut oil
- 1 tbsp pure maple syrup
- ½ tsp cinnamon
- 1 medium apple, unpeeled and chopped
- 3oz brie cheese
- 2-3 tbsp chopped pecans
- 25 Simple Mills Original Sprouted Seed Crackers
- Fresh rosemary, for garnish
Instructions
- Warm coconut oil, maple syrup, and cinnamon in a medium pan over medium heat. Once hot, add apple and stir to combine. Cover and reduce heat to medium low, letting apples cook for 7 minutes, or until softened. Transfer to a bowl to cool.
- Place crackers on serving dish. Top each cracker with a slice of brie, a spoonful of apples, and a sprinkle of pecans. You can also bake these at 350F for a few minutes if you prefer cheese warm! Garnish with rosemary, if desired.

I just looooove your humor, recipes, and approach to holiday cooking! It is going to be a Hummusapien Holiday in the Daniel household. I definitely have your baked pumpkin hummus on deck for Thanksgiving, and now these will most certainly be enjoyed by us on Christmas. Like you did recently for your cooked apples over oatmeal, we may add a splash o' bourbon to these beauts for that extra flava.
