Buffalo tofu and cauliflower on repeat, yes please.

Feeling lazy dinner! Cook a pound of ground chicken (or you could do 2 cans of chickpeas), season well, drain fat then mix in a jar of TJ's creamy autumnal harvest pasta sauce. Combine with a roasted spaghetti squash plus lots of parm (I recently discovered Sargento's and it is fantastic).
Bonus points if you air fry some panko mixed with oregano, garlic powder, salt, and olive oil for crispy texture on top. Serve with a bright salad (I can't quit this Gotham Green's mix).

I think I'm going to make my pumpkin cake for Thanksgiving...is that a thing? It's just that good.

Aaaand I can't stop making my flourless chocolate cake pumpkin muffins! Max houses these for breakfast. Also divine crumbled over vanilla Greek yogurt.

Every time I make these veggie tacos I wonder why I didn't make them sooner. They make me look so forward to lunch.

If you need a flavorful veg main this holiday season, don't sleep on this Mediterranean lentil quinoa stuffed butternut squash!

We hosted two families for dinner last weekend and I made enchiladas that were fantastic. I used inspo from different recipes but I think a few things made them extra delish...
I doubled this enchilada sauce recipe (love the cinnamon addition) after discovering my store bought one was too spicy, grated a block of Monterey jack cheese in the food processor for melty goodness, added lots of veggies to the chicken filling, and used TJ's soft corn + wheat tortillas.

Random leftovers salad with pesto pasta, tofu, cucumber, and greens. I was still hungry after so I had more pasta and some feta!

Another throw together lunch salad with roasted sweet potatoes, rotisserie chicken, feta, cucumbers, and Garlic Expressions dressing.

I've been craving pumpkin pie smoothies on repeat post workout. Lately I do a good spoonful of pumpkin, a couple frozen banana chunks, handful of frozen zucchini, lots of cinnamon and pumpkin pie spice, a little salt, flax, almond milk, and a scoop of vanilla protein powder.

I made this lemon butter cod using mahi mahi (served with salad and roasted potatoes) and OMG and it was soooo good! Sauce is in the pot.

A terrible picture of White Pie's "Butternut Banger," since these days when I'm out to to dinner the last thing that matters to me is photo evidence. Romesco, mozz, butternut squash, sausage, red onion and pepitas...yum. The touch of cinnamon was chef's kiss.

Things I'm Loving Lately
- I finished listening to The Nightingale and it was everything--moving, heartbreaking, intense...it'll stay with me forever. I also read Margo's Got Money Troubles for my book club and it was the most enjoyable and eccentric book I've read it a while. Absolutely loved! Let me know if you're reading anything great in the comments.
- I'm loving Robyn's comeback song "Dopamine." Did anyone else adore her growing up?
- We finished the latest season of "Great British Bakeoff" (amazing) and are a few episodes into the second second of "Nobody Wants This." Such a sweet, funny, easy show.
- I ordered this no makeup foundation (almond shade) after hearing a lot of buzz around it. I ran out of my usual powder so excited to try something different that people love!
- I showed you all on IG stories this amazing chic $18 slouchy black handbag from Target (that I saw someone wear to wearing and thought was designer LOL). I don't think you've ever bought something so fast! For anyone that got it, you must let me know what you think 🙂
- A moment for this very cute checker cardigan I've been wearing on repeat. I rarely link to clothes from Amazon (I'm usually let down by the quality) but this is an exception! So soft and really cute for everyday wear.
- Loving this olive oil sprayer because a) it's dark glass (light, temperature and time all degrade olive oil) and b) it means I can stop buying oil sprays at the store!
- I've been using this 24-count silicone muffin tin so much. I have the regular muffin tin version and love it for easy cleanup so I'm thrilled to have one for minis.
- I've mentioned this one before but I'm still shocked how much my eyelashes have grown with this lash serum. They now extend past my lash curler which has literally never happened!
- Just ordered these travel Picasso Tiles for the kids to use at restaurants etc. My kids LOVE the big ones so I know they'll be a huge hit!
- I bought two pairs of these Carter's ankle boots on major sale for the kids and they're awesome (water-resistant so ideal for cold days when you don't need heavy duty snow boots). I buy these every year and they wear them hiking, too.

Just finished "The Fury" by Alex Michaelides; was a page turner though I thought "The Silent Patient" was overall better. Onto "The Favorites" by Lynn Fargo - TBD! Also the pumpkin smoothie sounds fab ... may need to work this into the breakfast rotation soon!

I'm currently reading Too Old for This and am enjoying more than I thought. Also, if you haven't already read it, I couldn't put down We are all Guilty Here. Mean Moms, Park Ave, All The Other Mothers Hate Me are fun easy reads.
