Hey, friends! How are we doing? I'm feeling all the love this month after my birthday and Mother's Day. May is always a fun month around here!
We've been enjoying sitting outside as a fam in the crisp morning air before it gets super hot. Truly our favorite warm weather ritual. (We got these outdoor rocking chairs when we moved to Denver years ago and they've held up!)

Lovely Meal Inspo
Solo lunch at The Green Collective after a nice stroll in Wash Park! This was the power plate (also had a delish white chocolate macadamia energy bite).
I'm so in love with these roasted veggie black bean tacos with chipotle tahini. They make workweek lunches so fun!
Passover spread from our very casual seder last month! Muhammura dip and matzoh, chicken marbella, strawberry balsamic spinach salad, quinoa tabbouleh, za'atar pomegranate molasses roasted carrots, and plenty of charoset.
I added lots of fresh dill to my 5-min salmon salad with Greek yogurt (I get the big can of wild salmon from TJ's) and it really took it over the top! Hot tip: store your dill in a glass of water in the fridge and it'll last for weeks.
Chunky monkey frozen yogurt bark! Such an easy and fun warm weather recipe from my meal planning guide, PREPPED.
Seriously the most insane flourless chocolate almond butter muffins that somehow remind me of chocolate mousse. They're made with canned pumpkin (I can always find it at Target) for moisture but don't taste like pumpkin at all! A MUST MAKE.
Love one crumbled in a berry or vanilla Greek yogurt!
Simple grilled chicken with leftover roasted sweet potatoes, romaine with this delish miso caesar, and my fave buffalo cauliflower.
Taco night! Easiest dinner ever. Sautéed lean ground beef with taco seasoning in whole grain tortillas with lettuce, cheese, tomatoes, and guac!
OBSESSED does not scratch the surface for how much I love my new honey mustard chicken salad for an easy lunch. Have you tried it yet?!
The best BBQ tofu with roasted from frozen cauliflower and un-pictured potatoes.
30-minute chicken enchiladas for a foolproof dinner win!
Some frozen treats we're loving lately! Also loving Yasso chocolate chip cookie dough frozen yogurt bars. Yum.
White Pie Friday pizza night with hot honey, pepperoni, pickled jalapeños, and poppy seed crust. A dream.
Things I'm Loving Lately
- I've purchased this Klorane dry shampoo 9 times, LOL. It's seriously the best for eliminating grease and adding volume. Ever since having my second son, my hair gets greasy way quicker so this is a life saver.
- Huge Old Navy sale! I got the boys' some $6 shorts, this cute waffle knit pocket shirt, and got myself these insanely soft and comfy $10 biker shorts in clover and crayon blue. I’ve been wearing them on repeat!
- My favorite sunglasses are on sale for $12.74!
- I've been cooking sooo many recipes from The Mediterranean Dish: Simply Dinner cookbook and I'm in love! I could eat these vibrant flavors for every meal and be happy. Dinner tonight is saffron yogurt marinated chicken with strawberry fattoush salad and cilantro rice. YUM!
- My go-to mineral sunscreen stick for easy kids application + liquid version we buy every summer!
- Current athleisure outfit obsession: this black tennis skort with this wildy comfy perfectly cropped white tee.
- I've gifted these light up sky rockets a few times and finally got for my 4 year old Max--such a fun outside activity!!
- I bought Fubbles Bubbles (thanks for convincing me, Rachel!) and I'm so glad I did. They don't spill, so my kids can do them inside and outside with no mess.
HAVE THE BEST WEEK!

Yes love trader joes hold the cone, and KIND frozen bars. Some of our favorite treats as well. Your little guys are so cute! Hard to believe my little guy turned one last week. 🙂
