Meal inspo
True life, I've already made my healthy carrot cake with cream cheese frosting three times this month. Jeff requested it for his bday and we've been on a roll ever since! Def one of the only times my kids eat veggies, LOL.
I crave this breakfast every day. I'm trying to incorporate more fermented foods; sauerkraut to the rescue! Eggs cooked in my fave Corto extra virgin olive oil with avocado toast (Silver Hills Bakery) loaded with kraut, dill, and micro greens (such an easy way to add more greens).
I made my Instant Pot Veggie Pad Thai and man, I forgot how delish it is. I topped it with a lot of herbs and the fresh mint took it over the top.
Really loving Mediterranean food now and forever. Grilled chicken shawarma, roasted cauli and potatoes, tahini yogurt sauce, romaine mix with Garlic Expressions dressing.
I can't get enough of this higher-protein chocolate chia pudding topped with strawberries and caca nibs for a delish snack.
How gorgeus is this salad? Spinach, basil, roasted sweet potatoes (made in the air fryer), tomatoes, mini fresh mozzarella pearls, pepper deli turkey, and my better than bottles balsamic vinaigrette.
Leftover curry roasted cauli and chickpeas, kraut, rice, romaine, avocado, green onions, and Bitchin' Sauce for a super satisfying lunch!
I'm on a huge hot chocolate kick! I fill my Nespresso frother with unsweetened soy milk, 1 tbsp cacao, a pinch of salt, and a squeeze of raw honey or maple syrup. Turn it on to blend. Once it's nice and frothy, I stir in some vanilla. Sooo cozy!
Quick healthy tuna salad (with kraut!) for the win for a 10-minute lunch. I like it with Mary's Gone Crackers.
Blackened mahi mahi (wild frozen from Costco) with Instant Pot sweet potato mash (sweet potatoes, butter, cinnamon, salt) and air-fried green beans (also frozen from Costco, I air fry right from frozen with olive oil and seasonings).
Pictured below is how we served to kiddos! They didn't touch the fish or veggies. No sweat!

Sheet pan shrimp with lemony potatoes and veggies always hits the spot for seafood night!
Sausage pasta with broccoli, parmesan, green olives and olive oil is hearty yet still light and so comforting! I use chicken sausage. Brami pasta is my go-to.
Things I'm Loving Lately
- I just started Fourth Wing and am listening to the verrrry long audiobook on Libby but it's going by quickly! Loving it so far.
- I've been journaling and meditating for 10 minutes each (I use the Calm app and do the Daily Trip meditations) daily before my kids wake up for almost a month now. It's been wildly helpful for my brain and in turn, my body. I know I'd still be immobilized in pain without it. I've learned what inner work I need to do to heal my back pain, migraines, indigestion, rashes, and beyond. Beyond powerful and life-changing stuff. I've said it before and I'll say it again: everyone should read Mind Your Body like it's medicine (because it is) and listen to The Cure For Chronic Pain (and anxiety) Podcast.
- Love this journal, so pretty!
- I can't be trusted with expensive sunglasses. These are my current ride or die $15 pair.
- Some really cute socks to wear with my Adidas Sambas! I'm so pumped to rock these with a dress and blazer at a conference next month.
- I use this hair cream to style Max's hair every morning and just got our second bottle.
- I've seen a lot of people rave about this carpet cleaner but Jeff actually happened to find it and buy it. He loves going ham on our stairs, couches and carpets and showing me the brown water. Ew. It's wild!

When I do journal, even if it is for a couple minutes per day, it is helpful! I think we have the same tupperwear containers. 🙂 Thanks again for the reminders that if the kiddos don't eat their veggies no sweat. Always a helpful reminder. I think I am going to try your sheet pan shrimp! Looks good. 🙂

Thank you for the reco on John Sarno! I listened to his book and based on your rec. Curious for how long it took for you to notice a difference in pain and if any of his philosophies especially made a difference.

Hey Kate! I would really recommend reading Mind Your Body--Nichole, the author, is a therapist who learned under Sarno and her book is more modern and goes into a lot more detail on the healing portion with exactly what to do. She discusses in her book how attaching a timeline to healing is a form of resistance and to surrender vs focusing on a timeline. I know that's really, really hard. For that reason, I no longer discuss how long it took me because we compare as humans and it isn't helpful as we're all on our own journeys. Yes--his philosophies are the sole reason I'm no longer in pain when nothing else worked. When I had a relapse and did the work again (Nichole's journalspeak + meditation combo she teaches in her book) in a deeper way, it worked again. Journalspeak was totally new to me and that's been the real game changer.
