G'day, mates! How are things in your part of the world? The weather in Columbus has been absolutely beautiful, so we've been working on our yard a ton, which I find is definitely soothing for my brain.
I'm still not feeling super jazzed about cooking these days, but we're managing to make at least two dinners that make plenty of leftovers to get us through the week plus a snack to have on hand.
Onto the eats!
I've been loving a mix of cold cereal for breakfast with walnuts for crunch and juicy fresh blueberries. This was Bran Flakes, old-fashioned oats, Cheerios, and Kashi French Toast cereal with almond milk.

Overnight steel cut oatmeal with blueberries. I'm just obsessed with blueberries right now!
I was majorly craving grilled cheese and tomato soup the other night so I decided to whip some up on my own. It turned out so fab that I may have to post the recipe!
First I sautéed half a small onion in olive oil until soft then added a few cloves of garlic. Next I added a 28oz can of whole peeled San Marzano tomatoes with basil (bless Costco for selling these in bulk), crushing them with my hands, plus a couple cups of water, some oregano, basil, and lots of salt.
I let that simmer for 10 minutes then added cashew cream (½ cup cashews blended with 1 cup water). Stir, season to taste, and voila! I blended it the next day because I like the uniform texture.
For the grilled cheese, I just butter the pan and then place two pieces of bread down with a slice of Muenster cheese on each side. Cook until browned then smush together!
A green smoothie with frozen banana, peanut butter, spinach, flax, cacao, a date, and almond milk.
Chili and cornbread casserole for dinner!
Weekly pizza ritual, which was plain cheese from Harvest. So good.
Power Stir Fry from Alchemy Kitchen....my favorite.
Siggi's blueberry yogurt with a crumbled muffin on top.
Key lime pastry with an iced almond milk latte from Pistacia Vera.
A fresh, crisp Fuji apple from our Yellowbird CSA box.
I made these brownies (assuming it was the same recipe my mom made growing up from the back of the Hershey's cocoa box) and they tasted amazing but the texture was a little weird. I'm still on the hunt for an amazing classic brownie recipe if anyone has one!
Whole Food's peanut butter filled pretzels...so darn satisfying.

1. Favorite product: This 20oz Yeti rambler. We each have one (plus the mug version because I hate coffee that isn't super hot) and use it daily, for coffee, iced coffee, water, smoothies, whatever. It keeps everything so cold or hot! (Here are my favorite $25 wireless earbuds again because I still get messages asking for the link.)

5. Favorite article of clothing: These slide sandals. I've had them in black for a year now and they're the only shoe I want to throw on for a walk or anything outside. They're so comfortable and just so easy!

This is my go-to brownie recipe! And if you melt the butter in a large saucepan, you can just mix all the ingredients in the saucepan once cool-less dishes! Hope you enjoy!

I love this recipe! And then I make icing out of Coconut oil, cocoa, milk, and powdered sugar because I think everything is better with icing :).

Just realized that's the same as the Hershey's recipe! I don't know why mine had a weird texture on top, but they tasted great!
