My apartment is one naturally colored gum drop away from turning into a gingerbread house.
Gingerbread breakfast bakes. Gingerbread pancakes. Gingerbread no-bake bites. Gingerbread...bread.
Yes. I'm that Jewish girl dancing around the kitch to NSYNC's "Merry Christmas, Happy Holidays" while I whisk gingery whole wheat pancake batter and line the mantle with pine cones and red sparkly things I found at the grocery store.
The fact that gingerbread tastes so wondrous with chocolate makes me love it all the more. I wanted this breakfast bake to be a royal treat for the ho ho holiday so I went all out and topped it with a dollop of whipped cream. And more chocolate chips. And a sprinkle of cinnamon. Weeeeeee!
While we're on the subject...sprinkling cinnamon in coffee is EVERYTHING.
This uber healthy, vegan, gluten-free, super easy quinoa and steel cut oatmeal bake is not only packed with nutrients galore, but it's also the perfect present for your face after a night full of cookies.
Can gingerbread be a season?!
Gingerbread Baked Quinoa and Oatmeal

Description
Packed with winter's best flavors (plus a hefty dose of plant-powered protein and fiber), this healthy and delicious oatmeal bake makes the perfect Christmas morning breakfast
Ingredients
- 2 cups almond milk (I used unsweetened vanilla)
- 1 medium ripe banana
- 2 tbsp blackstrap molasses
- 5 large Medjool dates, pitted
- 2 tbsp ground flaxseed
- 1 tsp vanilla extract
- 2 tsp ground ginger
- 2 tsp cinnamon
- ¼ tsp salt
- ¼ tsp cloves
- ¼ tsp nutmeg
- ½ cup uncooked quinoa, rinsed
- ½ cup uncooked steel cut oatmeal (use certified gluten-free if necessary)
- ¼ cup mini chocolate chips (optional)
Instructions
- Preheat oven to 375F. Grease an 8x8in baking dish with cooking spray.
- Place almond milk, banana, molasses, dates, flax, vanilla, ginger, cinnamon, salt, cloves, and nutmeg in a blender (I used my Nutribullet). Blend until smooth.
- Dump into a medium mixing bowl. Add uncooked quinoa and oatmeal, stirring to combine. Stir in chocolate chips.
- Pour mixture into baking dish and bake for an hour.
- Cool on a wire cooling rack for at 30-45 minutes prior to slicing. Top with whipped cream (I used vegan Tru-Whip) and chocolate chips for an extra treat!

Hi there tried it today....was curious about how it would turn out… The quinoa was crunchy at the end of the project. Total fail
quinoa is quinoa., Granted oven times and temperatures vary however I’ve tried it twice and it still crunchilicious! i’m not giving up. Honestly I feel that pre-cooked quinoa would work much better given the lack of moisture and high heat times. All in all I still enjoyed the spicy treat.

I've followed the recipe to the T, and it didn't come out at all like the photos. Very undercooked and the quinoa is still very hard. Would it be best to cook the quinoa before hand? Any tips would be very appreciated. Would love to perfect this recipe.

The only explanation I have is that different quinoas can be pretty finicky about cooking...Yes I would. maybe boil the quinoa for 8-10 min before blending into the mix, or even raising your oven temp. to 400! Let me know how they turn out 🙂

Do you think this would work okay if I subbed applesauce or pumpkin purée for the banana? I want to make it for someone who really hates bananas. I know it probably doesn't taste like it at all, but she won't eat it if she knows there's banana in it!

Amg! Swoontastic. Even though it hasn't hit me -quite- as hard as it had in prior years, the gingerbread obsession is strong and I 100% agree that it needs its own season. Don't tell the cinnamon rolls, but this wins Christmas breakfast award for sure.
