Description

I absolutely love overnight oatmeal — it’s a fabulous healthy breakfast. This recipe for overnight steel cut oats is the easiest way to enjoy the benefits of steel cut oats! Spend just 5 minutes at night and wake up to perfectly cooked, whole grain goodness. Top with nut butter, berries and a drizzle of maple syrup!


Ingredients

  • 2 cups steel cut oats (NOT quick cook)
  • 4 cups water
  • 4 cups milk of choice (I like unsweetened vanilla almond milk)
  • heaping 1/2 tsp kosher salt

Instructions

  1. Bring milk, water, oats, and pinch of salt to a boil in a large pot (I use my 3.5 qt dutch oven).
  2. Let it boil for 1-2 minutes over medium-high heat, stirring often make sure it doesn't boil over.
  3. Turn off burner. Cover pot with lid and let it sit out on the stove overnight at room temperature.
  4. In the morning, stir and eat hot or cold (I like hot) with your favorite toppings! Store leftovers in an air-tight container in the refrigerator for up to 5 days.
