Description

A flavorful, creamy chia pudding bursting with fresh raspberry and vanilla flavor.


Ingredients

Units Scale
  • 1 cup Almond Breeze Almond Milk Hint of Honey Vanilla (or sub milk of choice)
  • 1/3 cup chia seeds
  • 1 cup fresh raspberries
  • 5 medjool dates, pitted
  • 2 tbsp almond butter
  • 1/2 tsp vanilla extract

Instructions

  1. In a medium bowl, whisk together almond milk and chia seeds. Add in raspberries, dates, almond butter, and vanilla. It doesn't need to be mixed together well since it will be blended later.
  2. Cover mixture and place in refrigerator for at least 4 hours or overnight.
  3. Dump mixture into a blender (I used my Nutribullet). Blend until smooth and creamy, adding a tablespoon more milk if necessary.
  4. Top with more fresh raspberries and shredded coconut if desired.
