Paleo Almond Butter and Jelly Swirl Bars

  • 3/4 cup creamy almond butter
  • 1 medium very overripe banana, mashed
  • 1 egg
  • 2 tbsp agave (or pure maple syrup or honey)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3-1/2 cup strawberry jelly
  • 1/2 cup mixed berries (optional)


  1. Pre-heat the oven to 350 degrees. Spray an 8in x 8in baking dish with cooking spray.
  2. In a large bowl, whisk together almond butter, banana, egg, agave and vanilla until very well combined.
  3. Add in cinnamon, baking powder and salt and whisk again until well combined.
  4. Fold in mixed berries if using.
  5. Pour batter into baking dish. Drop spoonfuls of jelly evenly over the top of the batter and swirl well with a knife.
  6. Bake for about 35 minutes, or until a knife inserted in the center comes out clean.
