- 3/4 cup creamy almond butter
- 1 medium very overripe banana, mashed
- 1 egg
- 2 tbsp agave (or pure maple syrup or honey)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3-1/2 cup strawberry jelly
- 1/2 cup mixed berries (optional)
Instructions
- Pre-heat the oven to 350 degrees. Spray an 8in x 8in baking dish with cooking spray.
- In a large bowl, whisk together almond butter, banana, egg, agave and vanilla until very well combined.
- Add in cinnamon, baking powder and salt and whisk again until well combined.
- Fold in mixed berries if using.
- Pour batter into baking dish. Drop spoonfuls of jelly evenly over the top of the batter and swirl well with a knife.
- Bake for about 35 minutes, or until a knife inserted in the center comes out clean.
