Description

No Bake Mint Chocolate Energy Bites with the best soft and chewy texture! Made in 1 bowl (no food processor) with better for you ingredients like almond and oat flour, flax, and maple syrup. Packed with protein and low in sugar for an amazing healthy snack right out of the fridge!


Ingredients

  • 1 cup almond flour
  • 1/2 cup oat flour (or old-fashioned oats ground into powder)
  • 1/4 cup chocolate plant protein powder (can sub more oat flour)
  • 1/4 cup cacao powder
  • 1/4 tsp fine sea salt
  • 1/2 cup cashew or almond butter
  • 1/4 cup pure maple syrup
  • 1/2 tsp pure peppermint extract
  • 1 tbsp water
  • optional but amazing: 3 tbsp dark chocolate chips + 1 tsp coconut oil, handful of crushed candy canes

Instructions

  1. Whisk together almond flour, oat flour, protein powder, cacao and salt in a medium mixing bowl.
  2. Add cashew butter, maple syrup, peppermint and water and use your hands to work well until combined. It should stick together easily in your hands after mixing and not be crumbly (see photo of dough). If it gets crumbly, add more water.
  3. Roll into balls.
  4. Melt chocolate chips and coconut oil in a small bowl in 20 second increments until melted. Drizzle over bites and top with crushed candy canes. Refrigerate til hardened and devour! Store in the fridge.
