This refreshing salad is packed with flavor, fiber, and crunch from the crisp mango, black beans, peppers, tomatoes, and a creamy avocado hummus dressing.
Ingredients

For the salad:
- 2 heads romaine, chopped
- 1-15oz can black beans, drained and rinsed
- 1/2 bunch green onions, chopped
- 1 mango, diced
- 1 bell pepper, diced
- 1 large tomato, chopped (or a handful cherry tomatoes)
- 1/2 avocado, diced
For the dressing:
- 1/4 cup Food Should Taste Good Black Bean Hummus
- 1/2 avocado
- 1/3 cup cilantro
- 2 tbsp fresh lemon or lime juice
- 1/2 cup water
- 1 tbsp extra virgin olive oil
- 1 tbsp pure maple syrup
- 1/4 tsp salt
- 1/4 tsp smoked paprika
- Freshly ground pepper, to taste
Instructions
- Place the salad ingredients in a large bowl. Toss to combine.
- If serving immediately, add dressing and toss to combine. If saving some for later, place salad in serving bowls and top with desired amount of dressing.
