Description
Crave-worthy cottage cheese cookie dough rolled into bites for easy grab-and-go-snacks! Made with almond and oat flour and sweetened with maple syrup, the flavor is totally reminiscent of healthy cookie dough and the texture is SO satisfying. My kids gobble these up!

- 3/4 cup cottage cheese (2% or 4% both work)
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 1/4 cups super fine blanched almond flour
- 1 cup oat flour
- 1/8 tsp fine sea salt (or 1/4 tsp for more salt)
- 1/3 cup chocolate chips (i like a combo of mini and regular)
Instructions
- Place cottage cheese, maple syrup, and vanilla extract in a blender (I use my Nutribullet). Blend until smooth.
- Pour mixture into a medium mixing bowl. Add almond flour, oat flour, and salt. Mix until combined then stir into chocolate chips.
- Roll into 16-18 smaller bites (or make them bigger, up to you!). They're a little bit more moist/sticky than your classic energy bite, but should easily roll. Store in the fridge for up to 1 week.
