Best Vegan Lasagna

Step 1: Cook noodles. Sauté mushrooms. zucchini and spinach until soft.

Step 2: Make  tofu ricotta

Use your hands to mix tofu, hummus, nutritional yeast, salt and garlic.

Step 3:  Assemble lasagna

Layer sauce, noodles, half of the ricotta and veggies.

Step 4:  Finish assembly

Add more sauce, noodles, remaining  ricotta and veggies, noodles, sauce.

Step 5: Bake

Cover with foil and bake at 350F for 30 min. Let rest for 15 min and enjoy!
