Description
Snack on my higher protein chocolate energy bites that taste like a [healthier] chewy brownie! Simply whiz medjool dates, pumpkin seeds, hemp seeds, and cacao in the food processor for a nut free energy ball that's easy to blend (not crumbly!) and perfect for lunchboxes. No added sugar!
If you don't need these to be nut free (we do for school lunches), I love these the most made with 1 cup of walnuts in place of the seeds. One cup of any combo of nuts and seeds works.

- 1 cup soft medjool dates, pitted*
- 3/4 cup pepitas (or sub walnuts if not nut free)
- 1/4 cup hemp seeds (sub more walnuts )
- 1/4 cup cacao powder
- 1/4 cup collagen peptides (optional for a protein boost, can be omitted!)
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt, plus more for sprinkling
- 2 tbsp milk of choice
Instructions
- Place dates in the bowl of a food processor. Blend until a paste forms.
- Add pepitas and blend until finely ground.
- Add cacao, collagen if using, vanilla, 1 tbsp milk, and salt. Blend until a sticky dough ball starts to form, adding another tbsp of milk if needed to moisten. It should be soft and easily roll into balls. (Be careful not to over-blend or they get greasy.)
- Roll into balls. I like to sprinkle with flaky salt. Store in the refrigerator (I like them frozen, too!) to help them keep their shape. They'll last for 2 weeks!
Notes
*If your dates are hard versus soft and squishy, soak them in a bowl of hot water for 5-10 minutes. You may or may not need the milk.
