Description
Healthy cranberry chocolate cookies made with almond butter, banana and chia seeds. With puffy soft middles and crisp edges, you'd never guess have no butter, refined sugar, or flour!

- 1 medium ripe banana, mashed
- 1/2 cup creamy almond butter
- 2 tbsp chia seeds
- 2 tbsp cacao powder
- 1/4 cup coconut sugar
- 1/2 tsp vanilla extract
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup cranberries, chopped (I used frozen)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat oven to 350F. Line a baking sheet with a silipat or spray with cooking spray.
- Mash banana in a medium bowl. Add almond butter, chia seeds, cacao powder, sugar, vanilla, baking soda, and salt. Stir well to combine. Fold in cranberries and optional chocolate chips.
- Using wet hands, roll dough into about 10 balls. Flatten slightly with hands.
- Bake for about 10 minutes, or until set. Store in refrigerator in an air-tight container.
