Fast and Filling Apple Smoothie (with Greek yogurt!)

Description

Creamy, perfectly spiced and totally nourishing, this delish Apple Smoothie made with fresh apples tastes like apple pie in a glass! Blending oats, walnuts (hello, brain-boosting fats), cinnamon and vanilla lend the pie flavors we crave plus Greek yogurt helps make it *actually* filling. With 13g protein and 7g fiber, this is a 5-minute fall breakfast fave in our fam!


Ingredients

  • 1 medium red sweet apple, like Fuji, Gala, or Pink Lady, cored and roughly chopped (don't peel)
  • 1/2 cup unsweetened soy milk (or milk of choice, can use even less for thicker smoothie)**
  • 1/4 cup plain or vanilla Greek yogurt
  • 2 tbsp old fashioned oats
  • 1 tbsp walnuts or pecans
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp pure maple syrup
  • 1/2 cup ice (can sub frozen banana)

Instructions

  1. Place all ingredients except ice in the order listed in a blender or Nutribullet. Blend just until smooth (we do this to break down the apple and walnuts). Add ice and blend again, until smooth and creamy, being careful not to over-blend.
  2. Taste and if you want it sweeter, stir in maple syrup by hand. Pour into a glass topped with coco whip if you're feeling fancy plus extra cinnamon!

Notes

*For a really thick smoothie, start with 1/4 cup milk and/or swap out the ice for frozen banana.

For extra pie flavor, you can add 1/8 tsp nutmeg!

If you don't have walnuts or pecans, you can sub almond or peanut butter.
