You may be wondering what in the world happened to “What I Ate This Week,” and the truth is that those posts take me suuuuper long to write (whereas I can usually knock out a single day of eats in about an hour). Since I’ve been traveling most weekends, everything’s been a little all over the place. They’re not gone forever, just for now. Thanks for bearing with me!
I was initially shying away from these kinds of posts because I didn’t want people scrutinizing what and how I ate or thinking that what I eat should be precisely what they eat. But all in all I’ve realized that posting the food I eat actually helps inspire a lot of people to eat more variety and to find more joy in food. If I can give you a new meal idea or encourage you to change up your breakfast routine, then to me that’s a job well done. Enjoy!
Two Van’s multigrain waffles with blackberries from my CSA, blueberries, date pecan butter, a drizzle of pure maple syrup, and Saigon cinnamon. Two cups of coffee with almond milk on the side! Lately I’m solely craving sweet in the morning. Gotta give the bod what it wants!
I spent most of the day running around the restaurants so lunch was my favorite bowl at TRISM. Ohio State is back in session and it’s so fun to see TRISM buzzing with students again! I had black rice, roasted sweet potatoes and carrots, sauteed greens, chipotle sweet potato hummus, maple tamari tofu, saucy black beans, house banana peppers, pickled radish, and herbed tahini sauce drizzled on top. I crave this glorious bowl every week!
I don’t make smoothies very often at home anymore; I never seem to crave them for breakfast. I think I cherish the time in the morning when I sit down with my coffee and eat a yummy breakfast too much to slurp something these days. Lately a smoothie is more of a snack when I’m at Alchemy since everything is right there for me. This one had banana, peanut butter, cacao, chocolate plant protein (this one is what I chose for at Alchemy and it’s the best ever, trust me), spinach, a few ice cubes so it was extra cold, and almond milk. So satisfying!
When I got back from Scottsdale Monday afternoon, I knew I wanted to make something yummy for dinner that a) didn’t require a trip to the store and b) would last for two nights. Jeff eats A LOT, so that’s a big deal around here. This Mediterranean Baked Fish with Tomatoes and Capers has become a favorite. I use an entire bag of defrosted from frozen wild cod from Costco, which is six good-sized fillets. Since I use more fish, I basically just do more of everything else also, like using three huge fresh tomatoes. I didn’t have golden raisins on hand so I used dates instead. I’ve also made it with apricots. I forgot the lemon and it was still delish!
On the side we had corn on the cob with butter and kosher salt plus our nightly salad made lettuce, tomato, cucumber and micro greens drizzled with extra virgin olive oil, balsamic vinegar, garlic powder, salt and pepper.
For dessert we dug into the frozen stash of Soft and Chewy No-Bake Chocolate Chip Cookies except I didn’t really measure. I used a mixture of almond flour and whole oats, less maple syrup, and 1/4 tsp salt. They were awesome! So good frozen, too. I had two with almond milk before bed and it was the perfect night cap.
You guys. I just bought a pair of these high rise ankle straight jeans in light wash from Abercrombie and they’re officially my new favorite pants. They’re high-waisted, incredibly comfortable (weirdly so for being jeans), and really flattering. I love the cute bottoms, too. But the best part is definitely how comfortable they are, considering I find myself not wearing jeans solely from a place of discomfort. They’re only $35 right now instead of $88! I’m also wearing these platform sandals, an awesome white top from Zara (similar), and hoops.
For fall stuff, I got this cable sweater in green (I think it’ll be really cute off the shoulder with those high waisted jeans), and this cable cardigan in cream with this black floral cami ($16.90) to wear underneath. I also got this plaid shirt in burgundy and cream on sale for $35. Really cute tied at the bottom! Also this tie front button up in cream will make you want to just lay in bed in snuggle all day. Size down.

I finished The Great Alone and absolutely loved it. It created in me a new sense of gratitude for modern life and totally made me want to see the rugged beauty of Alaska with my own eyes. There’s love, loss, and everything in between. It’ll warm your heart and make you cry at the same time.
If you’re craving more of a thriller, The Final Girls is about a group of girls with one thing in common: having survived a massacre. It’s an exciting read and full of unexpected twists. It’ll keep you on the edge of your seat!
I’m currently halfway through The Alice Network and I’m really into it. It’s a work historical fiction centered around parallel stories of young female spies in The Great War. I can’t wait to keep reading when I finish writing this post!
