    What I Ate & Wore Wednesday

    Hiya, friends! I'm writing this post from a comfy seat at the airport.

    I'm headed to Tampa for a trip with the Florida Department of Citrus to learn about orange juice production. I could definitely use some sunshine in my life right about now. Then on Friday I'm flying to Nashville a reunion with some of my foodie pal's from my Reality Israel trip this past April. This is the carry on suitcase I use for every trip and it's the BEST. So roomy!

    Breakfast

    I tried a new to me sprouted bread that I really liked. I always keep a few loaves of different bread in the freezer for regular toast and of course my beloved french toast. Breakfast was two pieces of avocado toast, one savory with everything bagel spice and micro greens and one with blackberries, salt, and coconut. The salt is key to bring out the sweetness.

    I also had coffee blended with almond butter, a trick I learned from Megan. So creamy!

    Lunch

    For lunch I had leftover cream of mushroom and wild rice soup inspired by the recipe in theΒ Fresh and Healthy Instant Pot Cookbook.Β I made it in my Instant Pot as written but used vegetable broth, added cashew cream, and a bunch of nutritional yeast. Loved the velvety smoothness! I enjoyed it with a salad using spinach from our CSA box, my favorite balsamic vinaigrette, chopped apple, and walnuts.

    Snack

    I've been so into salt and pepper popcorn lately. Best snack ever.

    Dinner

    Dinner was tuna noodle casserole and salad. I used this recipe as a inspiration but used a whole bag of pasta, added celery, peas, kale (like my old recipe), doubled the mushrooms, and added nutritional yeast, soy sauce, and parsley for flavor. Jeff and I both love this meal and it feeds us for a couple days which is always a plus.

    Dessert

    Dessert was the yummiestΒ chocolate chip cookiesΒ leftover from the batch I made Sunday. I followed the recipe exactly except no vanilla bean. Perfect with cold almond milk.

    Let's talk style!

    Loving this rose body suitΒ with my favorite ever black jeansΒ (also love these andΒ these). These are my fave pointy toe booties. My earrings are sold out but these are similar.

    I know a lot of you are loving these trousers! I have them in black and rust. This is a similar bodysuit in you want a long sleeve one but I also own this one in black and rust for summertime. I love these open toe black mulesΒ (these and these are cheaper options).

    Currently loving this faux leather moto jacket, block heel sandals,Β leopard slip ons (just bought them and they're insanely cute and comfy), leather satchel bag,Β maxi dress, mini skirt (love burnt orange and black),Β mockingbird dress, crossbody bag, andΒ slip dress. Have a fabulous week!

      The casserole looks fantastic - I would never have thought to combine nutritional yeast & soy sauce in the same recipe (although I suppose the soy was essentially just the salty component), especially with tuna! Any ball park idea of the proportions of everything you used? Thanks!

        Hey Meg! I didn't measure but probably 1/4 cup nutritional yeast and a good splash of soy sauce. It depends on how salty your broth is and how well you salt the pasta water so definitely just add it to taste. It adds a great umami depth of flavor in addition to saltiness!

      I hope you have the best trip to FL and then Nashville! You'll only be about three hours from me. πŸ™‚ I just booked a trip for me and Matt for a Nashville weekend getaway this summer!

      All of your food sounds phenomenal, especially the casserole and cookies. I need to try the blended coffee! I'm just scared if my Ninja tumbler will handle the hot beverage. πŸ˜‰

      Love all of the clothes inspo! I bought a pair of taupe block heeled sandals from Target last Friday to wear with a beautiful dress I scored from Goodwill for $6 to my best friend's April wedding! They made me think of you. <3 I've wanted a pair for so long.
