Guys. Meet my newest obsession…French toast!
I made it once for Simi last week with gluten-free bread since she has Celiac and made it this past weekend with Trader Joe’s sourdough and we were so in love. To make, I mixed together 3 eggs, a cup of unsweetened vanilla almond milk, 1 tbsp maple syrup, 1 tsp vanilla extract, 1 tsp almond extract, and 1 tsp cinnamon. I put the bread in a 9×13 inch pan and poured the mixture on top. I did this in two rounds since I couldn’t fit all the bread in the first time. Let it soak for a few minutes on each side then cook in coconut oil or butter over medium heat for a few minutes per side.
I topped it with two sliced apples that I cooked in 1 tbsp coconut oil, 1 tbsp maple syrup, and 1/2 tsp cinnamon that I cooked over low heat (covered) for ten minutes.
Lunch was a huge bowl of my Yummiest Vegetable Soup with Simple Mills jalapeno sprouted seed crackers. I forgot how cozy and comforting this soup is!
Snackage included Made In Nature’s new Veggie Pops. They’re crunchy and super satisfying, especially when you want something savory that’s not nuts or chips.
Dinner was my Power Mac & Cheeze (def went back for seconds!) using Trader Joe’s frozen broccoli. I also added a can of Safe Catch tuna. Kind of like tuna noodle casserole! On the side we made a huge salad with local grape tomatoes, micro greens, goat cheese, red wine vinegar, olive oil, salt, pepper, and garlic.
Throwback to when we saw Aladdin last week (such a great show and such a treat!) at the Palace Theatre and naturally we shared a box of my fave peanut M&M’s.
In other dessert news, I made these Amazing Chocolate Chip Cookies last night and they were FANTASTIC! Be sure to measure the flour properly by spooning and leveling it into the measuring cup, not putting the bag in the flour and packing it in (which leaves you with way too much flour). The dough should be nice and moist. The freezing step is essential! I used avocado oil and they were seriously amazing.

I always want to like french toast, and im always so disappointed! I think that really sweet cereal has me convinced that french toast is supposed to be sweet, so when the real stuff isnt its not what i want. LOL!
First of all, I’m noshing on your pumpkin spice bites-turned granola with milk right now, and it is everything. Yum!! Second, all of your food and fashion is perfection! I need to make French toast soon, and your combination sounds dreamy. I also want to be on the search for those savory crunchy vegetables. They would be just right when one is craving a salty crunch but doesn’t want chips! I love the look and sound of your pasta meal! So satisfying. M&M’s and Peanut M&M’s are my jam. Ever since reading Simi’s book, I think of her when I eat them. I have a gray sweater similar to yours, but I like the fit of yours a little better.
