Hi, old friends! I feel like we haven’t chatted in AGES.
Life in hummus land has been…interesting. I got a bad cold last week that totally took me out for a couple days. I didn’t have much of an appetite and not much energy, either. I’m finally feeling more like myself but I still have a cough that’s BONKERS. Like, uncontrollable cough attack in the middle of Kroger bonkers. I haven’t worked out in weeks but I’m taking this time to lay low, let myself be snuggly with books, and not cook a whole lot.
In the spirit of the giving season, today I give to you some yummy, more simple meal ideas! Nothing too fancy here and that’s just fine.
My Coconut Oil Chocolate Chip Cookies sans the pomegranate with a flax egg. Worked like a charm. I love making them with 72% chocolate chunks. It’s so fun seeing so many of you make them, too!
A smaller version of my Apple Cinnamon French Toast made in a skillet for two. Extra delish topped with Cocowhip!
Toast duo on sprouted sourdough. One with sunflower seed butter, cinnamon, and raspberries and the other with avocado, caraway kraut, everything bagel spice, and micro greens.
Last night’s dinner in honor of taco Tuesday. This yummy taco “meat” stuffed into soft corn tortillas with homemade guac and salsa. Salad on the side with mixed greens, pomegranate, the best cheddar, asian pear, and homemade balsamic dressing (olive oil, balsamic vinegar, maple, dijon, garlic, salt and pepper blended in the Nutribullet).
The best ever tuna melt from Katzinger’s! I was really craving a melty cheesy sandwich on Sunday. Old me would’ve found a “healthier” substitute but it felt so damn good to eat exactly what I was in the mood for, not some far less fun and satisfying version of it.

I’m so in love with these banana pancakes. I made them with eggs and melted butter and deemed them my favorite pancakes yet!
An Indian feast at New India. I freaking LOVE Indian food!
I came home craving simple buttered noodles one night last week so I cooked whole wheat penne and threw in frozen broccoli at the end. Then I sautéed garlic in a bunch of olive oil with a bit of butter over low heat and added the pasta and broccoli. Season with lots of kosher salt, a sprinkle of good parm, and voila!
Same jeans, balloon sleeve sweater (similar), black booties, and hoop earrings (also loving these delicate gold ones). On a random note, if you’re in need of a new one piece, I just got this floral one and I adore it!
