    Top of the mornin' to ya, turnips!

    First off, I was on two podcasts this week so be sure to have a listen! First up was Rebecca Scritchfield's Body Kindness Podcast and next was Paige Smather's Nutrition Matters Podcast. Hope you enjoy!

    Nowwwwwww allow me to introduce to you the busiest week of my life. TRISM's grand opening is Friday, we're gearing up to release the new bowls, we're finishing the renovations on our new home, and we move in this weekend. ALL THE COFFEE!

    Breakfast was a couple eggs that I fried in avocado oil for extra crispiness. I officially will never use spray oil again! On the side was a couple peaces of my favorite sprouted bread with avocado, everything bagel spice, and micro greens from our CSA box. Lately all I crave in the morning is savory so I'm just giving this bod what it wants!

    After breakfast I headed to Stauf's for a cold brew while I started tackling the day's to-do list.

    Lunch was this awesome Balsamic Dijon Tempeh Buddha Bowl with mushrooms, sweet potatoes, and leftover green beans. I forgot to make the dijon sauce but the marinade for the tempeh was AMAZING and the recipe comes together so quickly on a sheet pan. It's perfect for the lunchbox!

    I also had a big juicy peach that I forgot to snap a picture of so here's last week's.

    Later on my tumbly was rumbly so I snacked on vanilla yogurt with granola.

    I had no interest in making dinner given the amount of work I still had on my plate so we ordered food from The Crest which just so happens to be thirty seconds from our apartment. I got the veggie tacos with mushrooms, refried lentils, pico de gallo, Bulgarian feta, and hot sauce on the side. They majorly hit the spot. We also made a big salad with green leaf lettuce, carrot, cucumber and tomato plus homemade caesar which was the shiz and totally made the salad. I mixed up a few tablespoons of lemon juice, tahini, a big squirt of Dijon, nutritional yeast, lots of minced garlic, salt, pepper, and water to thin. Delish!

    Dessert was a slightly thawed from frozen S'mores Bar chased down with chilly almond milk.
