    What I Ate Wendesday

    Hi, hummus monkeys!

    smoothie

    True life: my smoothie is a swamp.

    I don't want to alarm anyone, but I think I maaaaaay have to switch over to make-ahead steel cut oats with bloobs and almond butter here soon. It's getting chilly. I still adore the smoothie I drink every morning, but my bod is craving warmer things. Nonetheless, I still did my usual routine yesterday: 1 cup frozen wild blueberries, 1 cup frozen spinach, ½ scoop Vega vanilla protein + greens, 1 tbsp cacao, 1 tbsp hemp seeds, 1 tsp spirulina, a splash of vanilla extract, and almond milk.  Such a dream.

    I have coffee with almond or soy milk every morning as well.

    lunch

    I made my friend Brittany's Lentil Loaf for Friendsgiving last weekend and we all adored it so naturally I whipped up another loaf this past Sunday. I'm thinking about freezing a couple slices and eating that as my main meal at the Thanksgiving table since everyone else will be eating turkey and I'll be like oh haiiii, lentil loaf! I heart you.

    I mashed a piece of loaf on top of toast smothered in hummus and sriracha. IT.WAS.AMAZING. Lentil loaf is life.

    curried chickpea

    I also had a bowl of Alchemy's soup of the day on the side which was a random mix of local organic cabbage, bok choy, onion, turmeric, curry, coconut milk, and broth. Yum in my tum.

    I slurped several samples of smoothies throughout the day, which I never include in these posts. If I posted a picture of literally everything I ate and drank there would be three million pictures. I had bites of our other vegan tomato bisque, tomatoes with cilantro lime hummus, curried chickpea salad, etc. It's my job to taste everythang!! Tasting is my favorite.

    protein

    When I got home from Alchemy, I snacked on handfuls and handfuls of Peppermint Chocolate No-Bake Bites (followed by all the glugs of almond milk) which are coming your way next Friday. Weeeee!

    hummus

    Then I whipped out my go-to roasted veg, brown rice cake, and roasted garlic hummus snacking combo about 10 minutes before Body Pump. I wouldn't say it was the wisest idea I've ever had.

    dinner

    I was ready to eat my hands when I got home from The Fitness Loft. Dinner was Vegan Sweet Potato Black Bean Enchiladas (adapted from these Vegan Lentil Enchiladas) with an egg, salsa, and hot sauce. They're coming your way tomorrow! So many nomtastical recipes going on, no?

    dessert

    I ended the day with a treat fest consisting of multiple rice krispie treats (how do you not eat a whole row?), some pumpkiny brownie thing, and a flourless cinnamon bun cookie a la my personal pastry chef, Arman.

      I would gladly drink your swamp water <3 And is it weird that my body actually craves smoothies more in the winter than it does in the summer? I think it's a thirst thing -- it's so dry in the winter and harder to get the water in, so a smoothie works wonders.

      It's sad because all I've been craving is big smoothie bowls but it's getting too cold 🙁 I NEED the recipe for those Sweet Potato Black Bean Enchiladas!! Also, Arman should make a detour to Louisiana and be my personal chef. Plz

      I'm planning on making that loaf for Thanksgiving! Quick question, do you think it's better the next day? I'm off on Wed. and wondering if I should make it Wed. or Thurs.

      I have been having overnight oats mostly every morning since I'm at work from 5-11, but I am starting to crave something warm as well. I've been eating more plant based and need to try those enchiladas. Also, that popcorn is life.

      i wish i liked warm oatmeal..therefore smoothies or overnight oats are my go to all year long. that curried chickpea salad looks divine!
