May is FLYING by and I’m just sittin’ here flying by the seat of my pants.
Is it just me or is everything happening so fast? Sometimes I wish life would just sloooowwwww down a wee bit. I want to stop and smell the flowers!! No time for that.
Breakfast was a thick smoothie eaten with a spoon, which has been super satisfying these days. In the mix went a cup of frozen blueberries, a cup of frozen spinach, a tablespoon of cacao powder and hemp seeds, a few drops of liquid stevia, tons of almond milk, and my fave brown rice protein.
After a nutrition consultation with a client at Alchemy, I snacked on a piece of avocado toast with sea salt, red pepper flakes, and micro kale on local whole wheat bread. I’ve been working on expanding our menu this week and I’m so freaking excited for all the new bowls!!
Lunch was a rendition of this delish spring farro risotto with lemon and tahini. I use less oil and farro, double the mushrooms, and add broccoli.
Snack was a vegan chocolate banana muffin, per usual.
I had an extra special Korean Bibimbap Bowl for dinner with a fried egg on top. The bowl was a mix of quinoa, fava beans, bean sprouts, edamame, green onions, spinach, sesame seeds, carrots and a super tasty sauce from The Purple Carrot!

Last night I whipped up Sweet Potato Mushroom Tacos with Chili Mango Salsa and the Korean Bibimbap Bowl. Both were super tasty, easy to prepare (hello, pre-chopped sweet potatoes), and tastes like the meals I would prepare on my own at home! It was pretty incredible not having to search for a recipe, go to the store to buy the ingredients, and then prep everything. They really take out the guess-work for ya!
