Breakfast
I met a friend for breakfast at Pistacia Vera and we shared my all time favorite pan au chocolate (ask for it warmed!) and the mushroom quiche plus plenty of coffee.
When I started my intuitive eating journey, eating out regularly was one of my favorite ways to get out of my comfort zone AND spend time with girlfriends (which is clinically proven to improve your health and make you feel fabulous). And it still is!
Lunch
I whipped up a batch of my Easy Vegan Black Bean Burgers because I didn't like having nothing prepped for lunch last week. I forgot how wickedly simple they are to make! I upped the spices a bit and updated the recipe to reflect that.
I was craving crunchy but also had some leftover spuds, so I had some potato chips and sweet taters with plenty of avocado, ketchup, dijon, and regular mustard on the side. I LOVE condiments.
I had spinach and shitakes from my CSA to use up so I sautéed them in olive oil and enjoyed some on the side with a few strawberries.
Dinner
For dinner I whipped up my Shrimp Vegetable Curry with Herbed Cauliflower Rice using Trader Joe's wild shrimp with a splash of lime juice. We had naan and salad with balsamic vin on the side.
I've been really into butter lettuce for salads lately because it's soft but still holds up well without going limp in a flash.
Dessert

I made these brownies on Sunday using butter (you can also use oil), water, and two pasture-raised eggs. I was FLOORED with how perfectly chewy and scrumptious they were, with plenty of rich cocoa and beautifully studded with chocolate chips.
Unlike most brownie mixes where the first ingredient is sugar, with these fudgy brownies it's actually almond flour!
I’m all about enjoying my sweets for what they are (you guys see bedtime treats in almost every What I Ate Wednesday post); but I appreciate that these brownies are sweetened with unrefined coconut sugar and have 25% less sugar than leading natural brownie brands without sacrificing flavor.

I substituted 1/4 c low fat plain Greek yogurt for the oil and added 1 tsp vanilla and a drizzle of milk chocolate over top and it worked out incredibly! Makes the brownies oil free on top of everything else!

I’m Jewish too and my parents just texted me, “Oops, I totally forgot, today is Purim!” Me too haha, forgot it was a thing. Give me all these delicious noms including those delectable brownies!! I love baking mixes. Nothing wrong with using them as is or adding your own flare! Also, your black bean burgers are the absolute very best. This reminded me I need to make them asap! Matt and I loved them so much he even recommended I make a double batch to freeze. ?

Hey, Kori, I love baking and I’m bored during my lunch break, so...
Here are some tips for adding your own flair:
1) chopped dark chocolate & handful of dried cherries (Black Forest brownies)
2) chopped walnuts and semisweet chocolate chunks (Chunky Monkey brownies)
3) lime preserves and sprinkled crushed graham crackers (key lime pie brownies)
4) cheesecake brownies (pour layer of cheese back batter on top of boxed brownie mix batter)
