Hey hi hello, friends!
Now before we get too far, I have a confession: this is not Alexis Joseph, our almighty, hummus-lovin’, blog writin’, dietitian Queen. No. This is Kendall. Kendall, your peanut butter eatin’, Grey’s Anatomy watchin’, Harry Styles crushin’, Hummusapien intern. Now, let me introduce myself.
So, basically my life is centered around food. I. LOVE. food. I’m not just talking any food, though - I’m talking wholesome, nutritious, delicious, raw, healthy food---with extra helpings of dark chocolate and nut butters (ALWAYS extra helpings of dark chocolate and nut butters). I wake up every morning excited for the day ahead, and extra extra excited for the food I get to eat. For me, food has become a creative outlet where I can brainstorm, create, enjoy, and yeah, you guessed it---I can stage a hella good overhead food picture. Do it for the insta, amiright?!
As far as my lifestyle, I eat well and exercise daily. I exercise not to count the number of calories burned, but because it makes me feel good! Novel, I know. For food...I LOVE food. I eat a plant-based diet. This means tons of fruits n’ veggies n’ nuts. I do make an exception for tuna and salmon, as well as the occasional bowl of gelato. And by occasional…I mean more often than not. Okay okay I know, I’m kind of a fake vegan, but a girl can do her best.
I started interning with Alexis in late September of this year. I was sitting in my dorm room at The Ohio State University, where I am majoring in New Media and Communication Technology, and was thinking about getting an internship. At the same time updated my instagram feed to see a Hummusapien pic. It was fate. So I emailed her, interviewed at the cutest local coffee shop the next day, and here we are! It was one of those amazing moments where you know your lucky stars are aligned and you feel unstoppable.
Now lets talk food!
This morning I had to wake up at 6 a.m and be ready for life by 6:45…I know right? Good thing the Breakfast Smoothie is super easy and need I say, super delicious. This morning, I was in the mood for a smoothie bowl, so to thicken the Breakfast Smoothie recipe I added half of an avocado and ¼ cup of almond milk instead of the ½ cup. I am not kidding when I say I walked across campus to my Office Assistant job eating my smoothie bowl from my ceramic bowl. It was SO worth it! #noregrets
After my shift, I headed over to the polls to perform my citizenly duties. It was my first time voting! AHHH what even is adulthood? On my way out I grabbed my sticker, bit into a crispy apple, and made my way to the gym for some power yoga.
After yoga, I sprinted back to the dorm because...hunger! I put some water on the stove of my dorm kitchen to boil my faaav red lentil pasta, but to keep me sane while waiting I popped a couple handfuls of Love Grown Food’s Power O’s in muh mouth.
I then topped my cooked red lentil pasta with some plain tuna, the other half of my avocado from this morning, minced garlic, and a drizzle of olive oil. I ate and vegged on my floor with an episode of The Office. P.S. - Kevin is my spirit animal.
After The Office, I went to class for an Italian exam…UGH, and then met a friend at Starbucks for a Cinnamon Chai Tea Latte with coconut milk.
For dinner, I baked some frozen root vegetables and topped ‘em with a couple dashes of Tabasco, and a scoop of hummus. Ya’ll know the saying: scoop of hummus a day keeps the doctor away!
While typing up this post, I took a spoonful of PB, and mixed it with a tablespoon of pure cacao powder. It is heaven on a spoon! Cue the Lizzie McGuire Movie - "Hey now, hey nowww. This is what dreeeaams are made of!"
So, this is me. This is what I ate. I can’t wait for tomorrow because that means a whole new day of eating, and I can’t wait to spend more time with all of you beautiful people in the future!

Interesting to see this from the perspective of a fellow college student. I too have a dorm kitchen fit with ovens and food processors but seldom use it for meals because I am forced to pay for a dining plan and it would be unnecessary money spent. While I miss my kale, eating meals has become a major source of socialization. Not having time to just "hang out", eating meals is my main source of down time where I can talk to friends. I see that you ate your meals this day by yourself, does that make you feel like you're missing out on social interaction? Was this a choice to eat good food over good conversation?

Hey Lori! I totally feel ya with the meal plan, I have one here at OSU as well. Thankfully though, we have a ton of different healthy options which I know is super lucky on a college campus. As far as good food over good conversation goes, I wouldn't say I have to make a choice between the two. I will eat meals alone when I have busy days, am crunched for time, or am craving something extra specific and yummy that I just want to make myself in the kitchen. I often eat with friends, go to the different dining options places with people, or we'll even set aside time every couple weeks to cook a big healthy meal together! Good conversation certainly does not mean a sacrifice of good, healthy food 🙂
