    What I Ate Wednesday - Intern Edition

    Hey whatsup hello, my people! It's Kendall again - the smoothie bowl fiend/food-obsessed college intern. Our fave hummus-lover put me in charge of the ever sacred What I Ate Wednesday AGAIN this week (bless her lil' chickpea soul). So, here goes a fun-filled post about me eating every yummy food I could cram into my belly in one day. Enjoy 🙂

    This morning I didn't have classes until noon, so I leisurely (and by leisurely I mean as fast as I could so I could shove my face in it) made this Blueberry Cacao Smoothie Bowl with a twist! I always add half an avo to all of my smoothies. The creamy texture is so amaaaze that I think I might actually have an addiction. The first step is admitting I have a problem, right? Hi, my name is Kendall, and I'm addicted to avocados.

    From my smoothie bowl I ran to power yoga, which, yes, was as intense as it sounds. Needless to say I was hangry as soon as I stepped out of the studio. No worries, I whipped out this RXBAR and probably downed it in 15 seconds flat. (This post not sponsored by RXBAR, pinky promise.)

    From yoga I went to my first class: Mafia Movies. Yes, this is an actual class. Who knew the mafia wasn't just Don Vito Corleone and the poor beheaded horse?! S/o to my professor's lean and cut arms she always shows off in her sleeveless business dresses. She is my Tuesday/Thursday inspo. From there I ran to the dining hall where I piled my plate with some steamed brocc, chickpeas, a big blob of hummus, and this delicious vegan chili that the OSU gods sent to our dining halls.

    After a another class and a shift of my work, I was so ready to eat. All the foods. On monday I ran to the grocery store and picked up the few ingredients needed for Hummusapien's Vegan Butternut Squash Pasta, so as soon as I got back to my dorm I ran down to our kitchen and started prep-ing it. Of course I couldn't wait for the pasta to boil and the little squashies to cook, so I devoured a few spoonfuls of avocado chocolate mousse that my perfect roomie/bff whipped up yesterday.

    In short, the pasta was THE GREATEST THING TO EVER BE EATEN EVER and to my friends who ate all the leftovers, I mean you're welcome 😉 Go make it ASAP.

    I finished off my day of eats with a small cup of black coffee and a huge cup o' studying. We'll see how much I sleep tonight.

      Avocados in smoothies was a genius idea, whoever first thought of it. I "leisurely" make all of my meals too - completely with ya girlie!

      I love putting avocado in my smoothies too, best texture! I have been drinking the same smoothie for the past two weeks. I can't get enough!
