What I Ate Wednesday + a Skincare Update!

    Published Oct 16, 2019 · Modified Oct 16, 2019 · by Alexis Joseph · 2 Comments

Why hello there, fabulous people! Fall is in the air and I am PUMPED about it.

I didn't plan ahead well and had to skip last week's What I Ate Wednesday so thanks for bearing with me.

    Breakfast

Jeff and I had some rare morning time together so we whipped up my pancakes with eggs on the side. Sweet and savory is my jam. Love me some wild blueberry sauce!

    Lunch

Leftovers are saving my life lately. We've been making tons in the Instant Pot because there's so little active time (and Jeff is a pro).

This Cauliflower and Butternut Thai Curry is seriously awesome. I buy frozen butternut squash and let it thaw out to save time.

We serve it over brown rice that, you guessed it...we made in the Instant Pot! We also made an amazing kale salad with blood orange olive oil we got as a gift, lemon juice, Dijon, salt, pepper, walnuts, and dried cherries.

    Snack

Trader Joe's crackers with olive tapenade have been my jam lately.

    Dinner

We made a big batch of lentil soup Sunday and paired it with tuna on toasted sourdough.

For the tuna salad, I use two cans of Wild Planet tuna from Costco, lots of sauerkraut, chopped onion, celery, and bell pepper, Dijon, red wine vinegar, olive oil, a spoonful of mayo, salt, garlic powder, dried dill, and lots of pepper.

    Dessert

I got these on Amazon for friends and ended up eating some myself. They're the perfect size! And there are few things I love more in this world than salted almond dark chocolate.

    Style Inspo

A lot of days at the restaurants I'm wearing an Alchemy shirt, but today I wanted to step it up a notch with the most comfortable black boots ever, a lovely camel cardigan, striped blouse, and black leggings. Comfy chic!

I went to Abercrombie last weekend and picked up some awesome fall staples plus a dress I can wear to an upcoming conference.

I always struggle to find dresses and skirts but this wrap dress (comes in three colors) fits like a glove.

This skirt is so flattering and is 20% off, too! I'm planning on wearing this white bodysuit with the skirt (got it in black as well).

Love the color of this burgundy button blouse.

This blouse super cute tucked into high waisted jeans!

Aaaaand a recent Amazon find! I lost my nice sunglasses last weekend and now I'm over spending more than $25 on a pair. Loving these round ones! I wanted to show you the purse pictured too but sadly it's sold out.

    Skincare

The reason my skin looks so clear is this cleansing oil (use code ALEXIS for 10% off)! I haven't used traditional "face wash" in months.

I just finished my first bottle and I'm seriously in love. It feels like a spa experience when I'm "washing" my face.

Afterwards I apply this retinol cream every other night and follow it up with the most luscious moisturizer in the world.

I only wash it at night. In the morning I just splash it with water. I typically use this tinted sunscreen under makeup in the morning, especially if I used retinol the might before.

    Have the best week, pals!
