Hi foodie friends!! Natalie here bringing you a full day of eats on this weather confused day!
It’s no secret that I’m head over heels in love with fall. Changing leaves, cozy sweaters and … intense heat waves? It’s been 90 million degrees for the past week and my fall loving heart is so confused. Shorts, tank tops and smoothies have all made a comeback and I’m rolling with it until fall decides to come back.
I don’t have AC so the only thing I can think about in the morning is cooling off with a big smoothie. Today I blended up a frozen banana, a handful of frozen strawberries, hemp seeds and a scoop of pea protein for staying power (I got mine at Trader Joe’s but I like this one too!). While my smoothie was blending, I ate a few spoonfuls of the most delicious granola I’ve ever laid mouth on and then added more to the top of my smoothie bowl because there’s no such thing as too much granola. I’ve been trying to get more Omega 3’s in my diet so I added some chia seeds and walnuts too!
Lunch today was a huge smoothie. I’m normally not one to replace meals with smoothies, but I needed something fast and easy. I haven’t had time to grocery shop and there’s nowhere to buy food on my area of campus, so a smoothie was my best bet. Recently I’ve been learning that not every meal has to be perfectly amazing and that sometimes eating (or drinking) something that’s not that exciting is worth my sanity when things are cray and I don’t have time to think about food.
Because I knew I wouldn’t have time to sit down for a meal, I loaded this baby up with TONS of spinach, chia, flax, chocolate protein, peanut butter, bananas and strawberries. The balance of carbs, fat and protein kept me going into the afternoon!
Snackage included a delish pumpkin spice Lara bar and some leftover broccoli dipped in hummus.
There’s no party like a pizza party!! I walked over to Blaze with some friends and we all got our own pizzas to eat outside. I went with the gluten free crust topped with tons of veggies, chicken, a little vegan cheese and roasted garlic. Pizza is something that will never not be satisfying to me. I ate 3 pieces and gave the leftovers to my sister.
Dessert was a flourless zucchini brownie from the freezer stash. You’ll have to trust me when I say it tasted way better than it looks.
