Hello there, luscious internet friends of mine!
Sooooo I’ve had these persistent headaches pretty much since Thursday. I’ve decided it’s gotta be allergies or some seasonal sinus issues because these cluster headaches also happened to me several months ago. I took Excedrin yesterday which finally provided me some relief. I also put peppermint essential oil mixed with coconut oil (because if I only do peppermint I find it too strong) on my temples and it was so delightfully cooling. I’ve been diffusing it at night, too. I’ve also been applying pressure to certain areas via this article. Very nice!
My appetite definitely hasn’t been as strong since nausea often accompanies a bad headache. Boo!
For breakfast I was craving a smoothie so I made a thick and creamy green version of my Pumpkin Pie Smoothie with pumpkin, a big date, frozen spinach, almond butter, chia seeds, vanilla protein, pumpkin pie spice, maca (tastes sweet and nutty, good for balancing hormones), and almond milk. So yummy!
I had my favorite leftover Hearty Vegan Stuffing waiting for me at home for lunch but I didn’t have time to run back so I grabbed vegan cream of potato and kale soup + kale and quinoa salad from Alchemy. The soup was off the charts delish.
I snacked on a chocolate peanut butter Vega bar on my way to TRISM. I need to make a pumpkin version of my Cookie Dough Protein Bars soon!!
For dinner I made pizza! I picked up a couple frozen pizza crusts and a can of jackfruit from Trader Joe’s and got my creative juices flowing. I made BBQ jackfruit for one pizza (red onion sautéed in olive oil with garlic, tomato paste, molasses, soy sauce, liquid smoke, maple syrup, ketchup, salt and pepper + pulled jackfruit) topped with TJ’s roasted corn, pineapple, and smoked gouda.
For the other one, I mixed Costco’s organic marinara with leftover chipotle in adobe peppers and used that as the sauce base. Then I topped it with leftover taco “meat,” roasted corn, smoked gouda, parm, and RJ’s marinated hot peppers which are insanely tasty. We had salad on the side. I’ve realized that our nightly salad is totally a habit, and quite a good one! I’m listening to The Power of Habit and the science behind forming and breaking habits is freaking fascinating. Next up on my reading list is The Untethered Soul and The History of Love. Have you read anything good lately?!
Dessert was a slice of leftover whole wheat pumpkin bread (obviously I added chocolate chips) warmed in the microwave with a smear of Earth Balance because you know I’m all about that sweet and salty life.
I hope you buy this Festive Fir candle that I just got on sale at Target because it’s such a dream. And the night gown that I’m wearing in the above picture. Now go have the best week ever!
OMG your eats look even more divine than usual! Those pizzas had me drooling! You should definitely post a couple pizza recipes; sounds like you’ve got a knack for them 😉

i’m SO behind this fall and still have not added pumpkin to anything!! that smoothie sounds incredible though, and i bet the maca is the perfect add-in! i’m loving it so much lately. and i seriously need to try that vega bar – i looooove their protein powder so i imagine their bars must be pretty good, too! have a great wednesday 🙂

Ive had horrible headaches too! I definitely think its allergies, but it hurts! I really want to try using jackfruit. Its just so foreign to me that im scared I wont do it right!

I get horrible headaches a couple times a month since but haven’t tried peppermint oil for yet! Thanks for this tip, and I’d love to hear about other things you do when it feels like you can’t function! Hopefully this delicious day made you feel better, that pizza looks AMAZING.
