Good morning, coffee beans!
In typical hummus fashion, I was running out the door for my first morning nutrition appointment so I only had to time to make one piece of strawberry avocado toast (which ended up being ok because I had a hugh jass dinner the night before and I wasn't super hungry). The toast which is basically bread with mashed avocado, sliced strawberries, coconut flakes, local honey, and a dash of sea salt. It's a best seller at Alchemy and I've been making it more lately at home!
Intuitive eating doesn't always mean eating more--it means honoring your hunger and fullness cues, no matter how big or small. Sometimes I wake up like a hunger beast craving monstrous breakfast sandwiches (and lately waffles!) and sometimes avocado toast or a smoothie suffices for me.
I sipped on all the coffee on the way in.
When I got to Alchemy our local farmer had some homemade buckeyes to try which you KNOW I was all over. S'good!
Lunch was my favorite leftover Chipotle Chili with Sweet Potatoes and Brussels Sprouts and a few bites from a delish pretzel tasting we had for the new happy hour menu at TRISM.
Snackage included this yummy new trail mix I picked up at Costco.
I went to the gym around 6pm for a Synergy class. Afterwards I hung around Alchemy for a while (it's right downstairs) and dug into a Quinoa & Kale Salad + our soup of the day which was a fab pumpkin curry.
I hopped back on my computer when I got home to knock out more work and write some thank you notes while I sipped on gingerbread tea.
Jeff got home around 9:30pm and I enjoyed a little fourth meal of sorts which was leftover penne with vodka sauce (SOOOOO good), roasted garlic artisan bread, and salad he made. The only thing I changed about the pasta recipe was accidentally using 16 ounces of pasta rather than 12.
It felt warm and fuzzy that I chose the white bread option that I really wanted versus the whole wheat one just because it's healthier. I really wanted a hearty, crusty baguette and it was perfection straight from the oven with buttah.
I stayed up till 11ish watching Larry David and finishing up some work. I got a hankering for something sweet before bed so I snacked on a dried apricots plus mini chocolate chips. Full and happy!
