Hellooooo from the craziest women ever that is me right now!!!
We're still amidst packing, moving, unpacking, and forgetting what a home cooked meal tastes like. Until tonight! We finally have functioning appliances and our new home is at last starting to resemble an actual home. I'll be doing a whole renovation post next month, but here's a sneak peak!
Isn't she a beauty? Hood comes tomorrow! I must've exclaimed fifteen times to Jeff how warm and fuzzy it felt to cook in a kitchen that I actually love.
I made breakfast for the first time in ages and it was glorious. Over the weekend in Santa Barbara at Big Soul we had the best overnight oats and they've been all I'm craving lately. Into the Tupperware went a cup of oats, about a 1 ⅓ cups almond milk, a teaspoon of vanilla, a tablespoon of chia seeds, hemp seeds, and maple syrup, and a pinch of salt. In the morning I scooped half into a bowl and topped it with a sliced peach, mulberries, and all the almond butter. I had coffee on the side from our gorgeous new coffee maker. Fantastical!
I worked at Alchemy all day so I started lunch with a random salad of arugula, spinach, beet kraut, chickpea salad, cucumber, and pesto as the dressing. About an hour later I had cream of mushroom and wild rice soup with avocado toast. So satisfying!
Before I left I snacked on half a blueberry superfood donut. Almond flour is the key!
I also had a turmeric spice latte because I was craving something warm and fall like.
After hauling more stuff (how do I have so much freaking stuff?!) to our house, I finally settled down and started making dinner around 9pm. I really wanted to not have to go to the store because we have so much damn food, so I used all our CSA produce to whip up this Summer Vegetable Lasagna Skillet which is the bomb diggity. I proceeded to burn my new pan but so is life. On the side we enjoyed a tomato salad with basil, olive oil, balsamic, salt, and pepper.
I snacked on a few of these new chocolate hazelnut Larabar Bites before bed and they were divine.
Forgive me for the blog being a wee bit quiet. It's been a wild past month with the restaurants, the move, and traveling but I can't wait to get back to you all!
