Hello yellow! I'm in the best of moods because we're jet setting to LA tomorrow till Monday for a dear friend's wedding. I've super duper excited to explore and eat and drink everythang.
I've been craving savory eggs and avocado + almond butter banana toast pretty much daily (or my favorite egg sandwich from Fox in the Snow) so I was surprised when I woke up wanting a cold smoothie. I blended up frozen wild bloobs, frozen spinach, frozen cauliflower, almond butter, chia seeds, spirulina, cacao, chocolate protein, and almond milk in my shiny new Nutribullet PRO! Toppings included cinnamon Puffins and cacao nibs for crunch. Delish!
Coffee. Always coffee.
I got the Lou and Gray dress I'm wearing in the picture from Loft and I love it because it's the softest, comfiest thing ever. This and this are similar versions, both on sale! I got my Express order in the mail and this camouflage lace up top is by far my favorite. So cute with white jeans! And how fab are these sandals for less than $30?
Public service announcement: if you're looking for extreme comfort and support and are willing to spend a bit more, I'm in love with anything Born. I got my first gladiator pair before Italy and I've been devoted to them ever since. This flat sandal and this Africa sandal are both pretty darn cute plus amazing for walking in the summer. Like my mumsy always tells me, support those tootsies!!
Sooooo I haven't been packing structured lunches lately and it's been kind of...amazing. It wasn't planned, either. I just stopped doing it. Quite intuitively, in fact!
I used to prepare my breakfast ahead of time, spend tons of time on Sunday cooking, and overall think a bit too much about what went into my meals every day. It was kind of robotic. And definitely neurotic. I love having the extra brain space these days to spend on things other than what goes into my belly. I lost the joy in all the planning somewhere along the way; and that's when I knew it was time for a change. I wanted to think less. I wanted to eat out more. I craved not knowing what was next. I wanted my eating to mirror my life: lighthearted, sweet, and spontaneous.
Releasing the pressure and eating whatever I feel like in the moment has allowed me to not only devote my time to things that make truly make my heart sing, but also to not feel so damn structured every day. And predictable. And boring!
Freedom tastes so good.
As a disclaimer, I totally get that not packing lunches isn't feasible (or affordable) for everyone. I'm lucky to work in a restaurant pretty much everyday and have lots of accessible options! Today is just about sharing an alternative perspective, especially if you feel like you're in a rut.
I spent pretty much the whole day at TRISM and was craving avocado toast and a big bowl o' curried chickpea salad for lunch. I'm pretty blessed to be surrounded by fantastic food all day. It totally hit the spot!
Snacks included some local cherries from our CSA plus the cutest little donut. I die!
Oh, and a cold brew.
We had pretty much nothing in the fridge for dinner and eggs actually sounded super satisfying, so eggs and avo toast for dinner it was! First I sautéed leftover zucchini, tomatoes, and bell pepper in olive oil with salt, pepper, and garlic powder until nice and soft. Meanwhile, I microwaved half a sweet potato and toasted some bread. Then I scrambled two eggs plus an egg white (I'm digging that combo lately) low and slow before adding in the veggies plus chopped chives. I sprinkled salt on the spud an spread avo on the toast and voila, dinner was served! There must've been hella fiber in this meal from all the veggies because I was full/bloated to the max afterwards. It happens!
I microwaved the rest of my favorite leftover chocolate cookie from Northstar for some post bedtime sweetness before getting turning on my beloved diffuser and sneaking in a few more pages of You Are A Badass. Next up is No Period.
