    What I Ate Wednesday

    Published May 24, 2017 Β· Modified Apr 18, 2022 Β· by Alexis Joseph Β· 46 Comments

Hello, lovely people of the webosphere!

    FullSizeRender

First, I want to address the fact that I've been a wee bit less involved with the blog lately. TRISM's upcoming opening has taken me for a wild ride and it's been a lotttttt tougher to find the time to put out the awesome content you deserve. It's weird trying to find a "work work" balance amongst some semblance of a "work life balance." All I really want to say is a big THANK YOU forΒ your endless support, even when I'm not as present as I once was. Life, I tell ya!

So I've been on a total oatmeal kick lately. I've either been doing steel cut oats cooked in half almond milk half water with chia seeds stirred in and topped with berries and almond butter OR this here oatmeal cereal of sorts.

I started withΒ Β½ cup organic rolled oats from my Yellowbird CSA in a bowl with a tablespoon of chia seeds, a sprinkle of this amazing Naked Granola Taste of California I found at TJ Maxx, and a good shake of cinnamon. Then I added a bunch of chopped strawberries, raspberries, sliced banana, my fave almond butter, and tons of almond milk. It's so satisfying!!

I also had my usual decaf coffee with the best unsweetened vanilla soy milk. That's how I always get my coffee at coffee shops so I finally bought my favorite West Soy organic unsweetened vanilla soy milk to have at home. It's also delish with cold brew!

I got some questions about decaf so know that a) I do drink regular sometimes, but at home I usually go with decaf because regular causes me some serious bathroom woes...TMI and b) I get swiss water decaf which means the caffeine is removed naturally by rinsing the beans with water rather than chemically. Right now I have Allegro organic decaf Whole FoodsΒ blend.

P.S. the skirt I'm wearing is from Target and it's the best. I have a black and brown versionΒ too that I wear all the time. Highly recommend!

Lunch was a random fridge lunch with mixed greens, cabbage, tomato, baked sweet potato, quinoa, roasted chickpeas, avocado, and croutons with leftover pesto as the dressing.

I made a chocolate version of my Flourless Banana Zucchini Cake Cookies so snackage involved a couple of those plus an apple.

Before dinner I snacked on a Siggi's coconutΒ yogurt with pineapple. The best combo!

Dinner was bean balls with the bestΒ Kirkland organic marinara sauce, whole wheat noodles and zoodles, garlic bread and salad. For the garlic bread, I slathered Dave's Killer Bread I found at Costco with Earth Balance, garlic powder, sea salt, and nooch and then broil on both sides till nice and crispy. It's the best!

I munched on more Β granola before bed. Happy hump day, lovers!

I wish you would take down your posts about "what not to say to a vegan and such" Clearly you aren't vegan, and therefore have no idea what people should say to them and what not. A dietitian promoting calcium depleting dairy and eggg promoting colon cancer.

I wouldn't take down that post for the same reason I don't erase pictures of my college boyfriend, my high school fashion faux pas, and the gazillion cans of diet coke I enjoyed in 8th grade. My past is a part of me, and I'm not ashamed of it--I'm PROUD of it. I feel no need to hide or delete who I was, no matter how "imperfect" it may seem to others who choose to spend their timing judging it. I'm human. Humans evolve. That's what makes us beautiful and dynamic and exciting. I will always learn from my past, embrace the present, and look forward to the future.

Finding comfy skirts is hard; I love that you found skirts that work for you. And having work that takes you away from the blog is not a bad thing at all; I'm glad your life is so full right now!
