    Hi, friends! I'm currently eating my way through New York City but lucky for you, I thought ahead and drafted this bad boy last week.

    Breakfast was a little sweet and a little savory, just how I like it. I reheated Apple Cinnamon French Toast Casserole (recipe coming soon!) and enjoyed it with So Delicious coco whip on top with a couple scrambled eggs. I love having yummy leftovers in the fridge!

    Lunch was a beet reuben from Alchemy Grandview with roasted beets, house vegan Russian dressing, Swiss cheese, and sauerkraut on toasty pumpernickel. It was SO SATISFYING.

    Dinner was lentil loaf, Pomegranate Za'atar Stuffing, Maple Balsamic Roasted Butternut Squash and Brussels (recipe coming tomorrow!), mashed potatoes, and gravy. For the mashed potatoes, I just boiled a bunch of quartered potatoes in salted water for about 18 minute, drained, and mashed with a couple tablespoons of butter, half and half, some water (vanilla almond milk didn't sound very good here!), plenty of salt, pepper, and garlic powder to taste. Such a cozy fall meal!

    For dessert I made another batch of these Amazing Chocolate Chip Cookies. We love having these on hand!

    I got a lot of questions about my wool wrap coat which is a couple years old, but this one is similar and this fur one is 50% off. If you're looking for a longer warm black coat with my hood, I have my eye on this one which is 67% off.
