    Heyo, lovely lemons!

    I thought it would be fun today to show you what a day of weekend eats look like since they're always a little more exciting. I look so forward to having lazy pancakes and coffee every Sunday with the man. I make sure the batter is nice and thick for extra fluffy pancakes. Also I found this random date syrup in the pantry and I've been using it in everything!

    For the topping I always microwave a bowl of frozen wild blueberries, stir in a spoonful of chia seeds, and let it thicken to make "jam." Pair that with tons of drippy almond butter and maple syrup for serious morning noms!

    Lunch was one of my all time favorite convenience foods...Tasty Bite's Madras Lentils stuffed in a sweet potato! My fifth ever What I Ate Wednesday post from way back in December of 2013 featured a really similar meal (with very fuzzy pictures, of course). Too funny! I love that the whole line is all natural and free of artificial flavors and preservatives. So fab in a pinch!

    Since you only have to microwave the pack for 60 seconds, it's super easy to throw together a meal. The Madras Lentils and Channa Masala are my favorite for stuffing in sweet potatoes but the Bombay Potatoes and Punjab Eggplant are crazy good as well. Just look for the yellow pouch in your grocery store's international food aisle!

    I also had a couple of these Italian dill pickles which are some of the best I've had. Ever. 

    If you like sauerkraut, these chips will basically be your dream come true. I can't stop with them!

    After lunch I photographed the Chocolate Banana Bread Pudding recipe that's coming tomorrow (OMG) and couldn't help but finish off the slice I photographed. I'm so freaking excited for you to introduce your tastebuds to it! I topped it with this birthday cake cookie dough ice cream and it was fantastical.

    P.S. The spilled milk was not on purpose.

    Pre-dinner snackage included a big organic fuji apple plus a banana zucchini oatmeal cup.

    Dinner was zoodles with bean balls, the best organic Costco marinara, a mango La Croix, and salad with green leaf lettuce, peppers, tomatoes, cucumbers, and carrots. I pretty much ate multiple forms of bread (no complaints) for every meal over the weekend so we welcomed all the fresh veggies.

    I get asked about salad dressing a lot. I make my own because I think it's actually easier than finding a bottled one I like. Costco has the best balsamic vinegar on the planet, which makes for a delish base. We start with leaf lettuce and add whatever veggies we have on hand. Then we do a heavy grind of sea salt, pepper, and garlic powder. Then we drizzle with plenty of extra virgin olive oil followed by balsamic vinegar. Toss and serve! We have this with dinner every night without fail.

      First of all your savory stuffed sweet potatoes look AMAZING, and fluffy pancakes are the best. I've heard really good things about that Sauerkraut brand; and chips sound like a really fun variation of kraut. 🙂

      And Lentils are so hearty; they make a really good meal.

      Oh the Madras Lentils look so good! Do you know whether it has milk in it? The package says "creamy tomato sauce" which alerts my dairy radar haha. Would love to try it if it's dairy-free!

      Yum to that sweet potato. I used to buy the Tasty Bite Kashmir Spinach with the paneer cheese all the time....kind of forgot about it!

      Ahh!! I too LOVE Costco organic marinara and their balsamic! I use a lot of it making this tofu recipe.....it's amazing! So yummy on top of an arugula salad.
