Reading your comments at the end of the night is like munching on salted dark chocolate. I savor every minute!
Sooooo I’m on a second round of antibiotics for this sinus infection that just won’t quit. It’s been hellish and believe me, I’ve tried everything! I’m supposed to take the medicine on an empty stomach so round one of breakfast was the last fluffy pancake we had leftover from the weekend topped with almond butter, maple syrup, and defrosted from frozen bloobs mixed with chia seeds to make “jam.”
I also had coffee with almond milk and honey.
Once I got to Alchemy, I finished off a new dragonfruit bowl recipe I’ve been working on for Trism!
Lunch was tomato bisque, quinoa and kale salad with tons of sauerkraut, plus the most divine sweet potato donut with maple glaze and coconut bacon that I shared with a pal. To die forrrrrr.
We stopped at Trism to check out construction progress so I dug into a Siggi’s coconut yogurt topped with walnuts and cacao powder–my favorite combo. I’m trying to sneak in all the probiotics I can!
More afternoon snackage included a One Bowl Chocolate Banana Muffin + a No-Bake Chocolate Chip Cookie.
Dinner was Costco’s wild salmon (the frozen packs are such a life savor in the time department) with dijon and maple syrup baked at 375F for 12ish minutes. On the side we had heaps of leftover Tempeh, Kale, and Enchilada Casserole and salad.
Dessert was chocolate ice cream drizzled with peanut butter, cacao nibs, and sea salt. I legitimately put salt on all my desserts now. I just can’t with the sweet and salty combo!
Have the best hump day, you lovely people you.
Your eating plan not only looks healthy, but it incorporates foods that actually taste good. You are meeting goals we all wish to attain. Great inspiration, Alexis!
You’re comment makes my soul happy, thanks Erin!
I know you said you tried everything for your sinus infection but did you try a chiropractic adjustment? It can really help relieve the pressure and promte drainage.
More importantly your eats look amazing!
Oh wow that is such a good suggestion! Thanks for reading, lady 🙂

I have never seen those frozen Costco salmons…Sheesh…I always get the big filet and then cut them up and freeze individually. My Mom taught me that trick of course. Feel better friend…XOXO
Yes they’re such life-changers! Thanks for reading, chica.

LOVE sweet and salty combos. I love adding sea salt to anything chocolaty. And what a yummy day of eats, I’m obsessed with how easy it is to cook frozen salmon on busy weeknights!
You simply can’t go wrong with the salty sweet combo…like EVER

That blueberry ‘jam’ looks incredible! Thinking it’s a breakfast for dinner kinda night. I always appreciate how your daily eats always looks so delicious, yet still made up of the stuff good for us. Yum.
Thank you so much, Juliette! And when is it not a breakfast for dinner kinda night? 🙂
