Hello, honey bees!
First I want to say the biggest thank you ever for all of your sweet comments on the last few posts. Things have been a little different around these parts lately and I'm thrilled that you all have been so receptive to the slight shift in content. I'm trying my best to respond to everything but I really appreciate your patience in the mean time!
Breakfast was eggs (we get the 24-pack of organic ones at Costco), grapefruit, banana almond butter toast with cacao nibs, cinnamon, and honey plus avocado toast with sea salt and red pepper flakes. Lately I've really been craving a bunch of different flavors and textures at breakfast so I'm giving this bod what it craves! We've been using Angelic Bakehouse bread which we get in three packs from Costco and we're obsessed.
On the side was coffee with a frothy combo of almond milk, cinnamon, and honey.
Lunch was a hugh jass Tupperware of my Rosemary Roasted Potato, Mushroom, and Lentil Salad sans the rosemary. It's just as good without it! I used Trader Joe's pre-cooked lentils and lacinato kale. Why are roasted potatoes the best thing that ever happened to me?
And lettuce not forget my daily sliced apple with all the cinnamon!
While I cooked dinner I picked at some leftover roasted sweet potatoes dipped in hummus, which is a divine combo if you haven't tried it yet.
Dinner was a cheater version of my Easy Vegetable Teriyaki Stir Fry with our usual salad on the side. I used extra firm tofu that I pressed, cubed, seasoned and baked at 350F for 30 minutes. For the veggies, I used two bags of TJ's harvest veggie mix (which is like stir fry veggies) instead of fresh. It came together in a flash! P.S. The cashews totally make the dish.
Dessert was The Rockiest Road ice cream straight outta the carton cuz I'm a lady like that.

Lastly, I've been meditating. I've only done two days for 10 minutes but I'm trying really hard to stick with it! I'm a big fan of the Insight Timer app if you prefer the guided kind. Happy hump day!
