Howdy, precious pals!
I spent partΒ of this week...crying.Β Over things I probably shouldn't be crying about. But so is life. Is that weird? Too much information?
I'm a little emotional. Over-sensitive. Overwhelmed. Welcome to the lovely life that is doing what I do best...a little bit of everything. It doesn't come easy and it doesn't come without confusion, anxiety, and fear. Thank God for my familyΒ who knows me better than anyone and can talk me out of any problem, large or small. Like my mom told me, sometimes there are more questions than answers. And that is okay. Here I am today on a new day, writing about food. Because food makes me happy---that I know for sure.
Anywhoozle, I hope you all had a lovely Valentine's Day with your lovely beau or your even lovelier self!
Breakfast was one of the best smoothies I've made in a looooong time. First I blended half a raw, peeled beet with almond milk since it's harder to blend than the other stuff. It was hot pink and SO gorg! Then I added frozen cherries, frozen Wild Blueberries, frozen cauliflower, frozen peas, frozen spinach, a big spoonful of peanut butter, Chocolate Vega Protein + Greens, avocado, and cinnamon. It was so thick and dreamy. I almost married it.
Lunch was super delish leftovers from a tasting for Trism.Β I haven't talked much about the new restaurant concept yet but don't you wait, it'll have its moment to shine. This blend had lentils, beet hummus, falafel, pickled turnips and onions, kale salad, cucumbers and tomatoes. Can't go wrong with any of those!
Snacks included a big sliced apple with tons of cinnamon, a few Lemon Coconut No-Bake Bites, and baby carrots with hummus.
I headed home from work and walked into our apartment decorated with all kinds of Valentine's Day goodies, roses and all! The boyf knows how to do it right.
Dinner was a hugh jass Village Salad from Northstar packed with greens, avocado, dates, almonds, tofu, chickpeas, beans, and croutons. I also had some sausage-less bites of pizza, of course. The perfect V-Day treat!
We came home, turned on The Americans, and dove into a couple pints of ice cream.

Life may be overwhelming and make you cry, but at least you have a loving boyfriend and some pints of ice cream. What else does a gal really need? π

Sometimes it feels good to have a good cry, even if it's over something that's not worth crying about. I feel like it's a good source of stress relief for me.

Honestly your vulnerability is SO refreshing in this blogging world! I think we make this job out to seem like its unicorns and rainbows every damn day but it's not! It's a lot of hard work and its totally worth every minute of that hard work but I appreciate you sharing that it's not always easy! Keep rocking it girl π

I'm sorry you feel overwhelmed : ( Life is interesting, isn't it?! The Headspace app has been really helpful for me. I have quite a bit of anxiety, so I think it helps to stay mindful & present. And your V-Day looks like it was very lovely! Thanks for sharing

It is an awesome way to sneak in some veggies and extra nutrients into the smoothie! The cauli is flavorless with all of the other ingredients, plus it makes the smoothie super thick and creamy π

That pizza crust is calling my name! What a fabulous day of eats...And about emotional days, mine are typically on Tuesdays. I don't know what the heck it is with that damn day, but we don't get along. HA! Thank goodness for beautiful beet smoothies and boyfriends who spoil you. xoxo
