Happy Wednesday, ya hungry hipsters! Kendall here taking over this week’s What I Ate Wednesday while Alexis is getting back into the swing of things.
It’s week three of the semester and you better believe I am feeling that college/extracurriculars/internship/job work load full force! Unfortunately I’ve been getting sick on and off the past couple weeks. Since I haven’t been feeling on my game, I’ve been super focused on fueling my body with all the good foods this week.
What started off as my fave Wild Blueberry Detox Smoothie turned into an “everything but the kitchen sink smoothie.” This thing was action-packed with blueberries, cauliflower, avocado, spinach, pumpkin, banana, chia, cinnamon, turmeric, and a small scoop of Vega Protein + Greens all topped with bee pollen. And yeah, I like ’em THICK. Shout out to my roomie bestie Emily for keeping it so real with this Magnolia Home mug. Who else watched the new episode of Fixer Upper last night!?
After slurping my smoothie, I ran out the door to get in a quick workout before my first class. Naturally I was famished again by 11 a.m., so I chomped on an apple while walking to the library.
Lunch was very special because I finally convinced my BFF/little/soul sister Lauren to swipe me into the best dining hall on campus. I relived my sophomore year dreams with broccoli and cauliflower roasted to perfection, some roasted sweet potato, a big scoop of the thickest, most delicious hummus, a bowl of veggie chili, and some sweet potato fries. Lo, I owe you big time.

After a few more classes, I was ready to head home again and feast again. I threw some veggies into the oven, waited for them to cook, and meanwhile ate a rice cake slathered in almond butter and topped with banana and cinnamon. YUM.
Dinner was a kale salad topped with tuna and roasted curried veggies.
