    What I Ate Wednesday

    Ellooooo mates!

    Holy moly my booty is sore. TMI? I think not. Honesty is the best policy.

    The combination of back to back Barre3 classes plus a 6am Body Pump class yesterday morning has been quite a rough one for my behind. Being sore is like waiting a long time for food at a really good restaurant. It sucks in the moment but it the end it's SO worth it.

    I couldn't wait for my smoothie after that sweaty Body Pump sesh. This one had frozen bloobs, Skoop brown rice protein, a date, cacao, frozen spinach, and almond milk. AKA the usual.

    Did you know I get my frozen blueberries on Target? It's a hugh-jass bag for ten bucks. Yes please.

    I roasted some sweet potatoes before I got in the shower and ate nearly half the pan when I got out. The sweet potato struggle is SO real. I recently discovered the golden ones at the store and OHMYGAWD. I think I like them even more than they're orange counterparts.

    Lunch was a leftover avocado bean burger (all crisped up in the oven at Alchemy) over spinach with tomatoes, micro kale, and a drizzle of red wine vinaigrette.

    I snacked on a big organic gala apple sliced up with cinnamon, a vegan chocolate banana muffin, and a bit of leftover spring farro (which is amazing, by the way. I make it without the oil!).

    I also had decaf iced coffee with soymilk while I worked at Stauf's all day. I'm obsessed with their iced coffee, but even half caff keeps me up all night. Weird. Then I ordered some mint tea because I always have to be sipping on somethin'.

    The above picture is my coffee shop office. Isn't it special?

    Dinner was a mediocre arugula salad with beets, goat cheese, walnuts, and balsamic from Hubbard Grill. It was meh.

    But it was alllll better when we stuffed our faces with hot fries and cold beer afterwards at Pint House.  Yes, I eat fries. And drink multiple beers. I die for Fat Head's bumbleberry! Blueberries everywhere.

      I had homemade ice cream with Fat Head's Bumbleberry and berry reduction once... it was one of the most memorable desserts of my life. So. good.

      I love Stauf's! I kind of miss how you could get a sandwich at Cup of Joe though. I'm going to buy my frozen blueberries at Target from now on, what a steal!

      Your eats look amazing! I always try to make black bean burgers but they usually come out really bland and watery for some reason (guess i'm not draining the beans enough), but your recipe looks super good. I also love the fries & Fat Head's Bumbleberry beer from Pint House! It's my fav!
